Carrots in Dill Butter

Frosted Chocolate Chip Cheesecake

One of the first cheesecakes I made that did not crack. At first I thought the topping would be a great way to cover the cracks, not necessary for me this time! I actually think a topping that was a plain melted chocolate would be better on this. Really it does not need one at all. Easy and delish, I added approx 1/8 cup more cookie crumbs than called for.

Berries 'N' Cream Brownies

Such an easy way to dress up brownies. Brought these to a small party and even showed up late and the entire pan was still demolished. I did not put the hardshell chocolate on top b/c I did not have any but it was still really yummy and pretty. Will use this one again!

Rotini with Broccoli

Made this as written and ended up eating most all of it on my own. Not a recipe that will blow someone away or even have them asking for seconds. Going to search for better ways to use fresh broccoli.

Fresh Strawberry Upside Down Cake

This is easy. It looks, smells and tastes good. I was disappointed in it, I guess I thought I would have a gooey marshmallow layer, but the marshmallows are absorbed into the cake and it is a big fluffy cake with baked strawberry on top. I needed ice cream with this b/c it was too much cake for me. Made as directed, others really liked it but it was not 5 stars for me.

Chocolate Chip Banana Muffins

I got distracted while making these and forgot one of the main ingredients - sugar! You know what, they still taste great! I used 1 c flour + 1 c whole wheat flour and kept everything else the same, of course I did not mean to omit the sugar. So if you are wanting to make these healthier or for a diabetic, you can make w/o the sugar. The vanilla and choc chips (I used mini) distribute enough sweetness that they are still good.

Fresh Blueberry Pie II

Followed the recipe to a T, one of the best fruit pies out there! Love, love, love it!!! So easy to make, too!!! Baked the pie shell first (did not prick it and filled it w/dry beans) then filled it later. Did not use a top crust, put whipped topping on and it was magnifique! Update: instead of filling the shell with beans, I have found a way to bake the shell w/o wasting any beans. Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450 degrees F for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack.

Cottage Cheese Pancakes

Subbed a lil' over 1 T applesauce for the oil, used whole wheat flour instead of regular, also added 1/2 tsp vanilla. Kids were not crazy about them so don't know if I will make any time soon, but it was a good way to use up cottage cheese near the expiration.

Seven Layer Taco Dip

Strawberry Whipped Sensation

Mom made this, recommended putting more cookie crumbs on the bottom. If you make it with the fat free sweet. cond. milk it will not set up, and people actually liked it that way better than when it was frozen!

Monster Cookies VI

Used 2 c of quick oats, the remaining old fashioned oats. Used a little over 1 c of brown sugar, somewhere between 3/4 c and 1 c of white sugar. Put 6 m&ms on each cookie, loved the results! Stirred by hand in a big bowl, used real butter. Baked 12 min, no longer or definitely would have been too brown I think. Any less and the center would not have been done enough. Impressive looking cookie and very yummy! Did use an ice cream scoop so they were nice and big, only put 6 on a sheet at a time.

Braised Balsamic Chicken

Pretty good1 Hubby went back for seconds and he is normally horrified to see anything fixed with tomato chunks. Easy to make, will probably make again. Served with angel hair pasta. Used garlic powder to season instead of garlic salt.
