Savory Chicken Breasts

Reviewed: Feb. 17, 2011
Hubby thought this was too bland even though I sprinkled some garlic powder and Italian seasoning on top. Next time will have to season both sides of chicken breast and try to jazz it up a little more. Overall a good, easy dish though. Served mine with egg noodles. Made 7 breasts in an extra large pan, doubled the chicken soup part and there was plenty of sauce, would have been way too much for only 4 breasts, that is for sure.

Sour Cream Chocolate Frosting

Yum! Great recipe. Used margarine instead of butter. I agree that this is a tangy frosting, not too sweet as another reviewer thought.

Greek Green Beans

Reviewed: Feb. 2, 2011
I'm not a big fan of green beans, but I loved these! Used canned beans, a can of tomatoes w/onion & garlic + 2 small onions and garlic. Omitted the salt. Delish!

McCormick® Gingerbread Men Cookies

Reviewed: Jan. 3, 2011
This was our first try making gingerbread men, and they were fantastic! The first batch was a little sticky to get off the counter so we used more flour (our definition of lightly floured must be different). They taste great, the kids love them. Used a simple powdered sugar/vanilla/milk recipe from BHG for the icing, very good!

Banana Banana Bread

Reviewed: Dec. 16, 2010
Yummy! I made this in small loaf pans (4x2 maybe?) and gave it to the neighbors for Christmas. What did not fit in the loaf pans I put in a muffin tin. Muffins baked for 16-20 minutes. Small loaves baked at least 27-30 minutes, not sure on the exact time.

Pumpkin Pie Cake II

Reviewed: Nov. 12, 2010
This recipe used twice the amt of pumpkin than a similar recipe my mom has and I really like the thicker pumpkin layer. Yum! I made it in 2 8x8 pans, giving one away and keeping one for here at home. I probably should have taken it out at 50 min, but let it in 5 min more, but it is still great.

Double Layer Pumpkin Cheesecake

Reviewed: Nov. 11, 2010
Easy and really good. If you are in a hurry you can just use the store bought graham cracker crust and it doesn't take much time to mix up the filling. Then use the rest of the pumpkin on one of the other fabulous pumpkin recipes on this site! I made the pumpkin apple muffins. I thought this could have been a little more pumpkin-y, but a lot of people said they liked it.

Apple Pumpkin Muffins

Reviewed: Nov. 2, 2010
These are really good! Didn't have pumpkin pie spice so I used 2 tsp cinnamon, 1/2 tsp nutmeg and 1/8 tsp allspice. Cut the amt of sugar in half. Subbed half of the oil with unsweetened applesauce. Also did 2 c of AP flour and 1/2 c wheat flour. Hanging on to this recipe! Best part was that both kids had fun helping me make these.

Banana Muffins II

Reviewed: Oct. 30, 2010
These turn out really good even if you completely forget to add the sugar! Would be better w/sugar, but what isn't? Made a 2nd time w/sugar, very good - had 14 muffins and this time added 1/2 c. of chopped walnuts, really liked those in there. Had to bake them longer, I think I may have had an extra 1/2 c of banana, so that is probably why, but they were in the oven a good 18-20 minutes and still were very moist.

Chicken Soup III

Reviewed: Oct. 24, 2010
So I know exactly what to do next time: Cook egg noodles in the pot, rinse, put away till you need them. In same soup pot, cook approx 8 chicken thighs (after removing skin) in water - bring to a boil, simmer for 25 minutes or so. Remove them, cool them, pick meat off. Put pot w/broth in fridge, wait for fat to rise to the top, then remove. Return pot to stove, add chopped carrots, celery and onions, bay leaf, celery seed, pepper, 3 bouillon cubes, marjoram, parsley, & a little bit of thyme. Bring this to a boil. Reduce heat and add chicken and noodles - let this simmer for a good 2 or 3 hours. Remove bay leaf and enjoy! Soooooo good!
