Peachy Moist Muffins

LOVED these. Only 2 changes - added a little milk, added 1/2 tsp of baking soda. This recipe was perfect to use up some peaches that really were not all that great. My hubby usually does not eat muffins that well or peaches for that matter, but he adored these! So, so good. Made these a 2nd time, forgetting changes I made 1st time! Did not add baking soda or milk but exchanged walnuts for pecans b/c I had a lot of walnuts to use. Also used 1 c AP flour and 1/2 c WW flour to make them a little healthier. Got 14 muffins this way.

Gobble Up Granola Snacks

Delicious and pretty nutritious, too! We do not need to buy granola bars from the store anymore, these are so fast and easy. My kids love them, sent them with my daughter for her treat day. Great summer recipe that does not heat up the house. Will probably play around with adding different ingredients for a change of pace. This recipe is a keeper!

Vanilla Ice Cream III

This took a very long time to set up in our electric ice cream maker. I'd say it was going for 2 hours, at least. Used 3 cups of whipping cream and poured up to the fill line w/two percent milk for the rest of the liquid. Only had about 1 2/3 T of vanilla, would have been better if it were the full 2 T, I think. Good, but will probably try another recipe.

Strawberry Pie

Everyone here loved this pie, but what is not to love - fresh strawberries, ooh la la! I used a little less sugar than called for, somewhere between 2/3 and 3/4 c and I would do that again b/c it was not missed at all. Like that this recipe tells you how to bake the crust for this pie.

Satiny Chocolate Glaze

Tastes great, easy to make, but I have another recipe I would rather use because I think it drizzles better than this one, and that is important when you want the glaze to drizzle down the side of the cake and look nice.

Quick Chicken Divan

I liked this fast, easy meal. Perfect for a busy week. Served it over white rice. Added 2 tsp of lemon juice on accident instead of one, I think I like it that way. Used light mayo and one can of the soups was a reduced sodium soup, turned out great.

I really liked this, adjusted it to make six servings, probably only used 2 cups of baby carrots and started cooking the carrots approx 5 min before the potatoes.

Emily's Famous Banana Oat Muffins

I thought these were good, and fairly healthy compared to many muffin recipes. I did do half wheat flour and half regular, half applesauce and half canola oil, also subbed in nutmeg for the ginger b/c I am not a fan of ginger. I will probably make these again!

Really good....made it for my daughter's baptism luncheon, went over well. Easy and can be made several days in advance, so great for parties. We served this cold.
