Cake Balls

Made w/Germ choco cake and coconut icing! Yum! Easy! Decoated for Valentines day, a big hit. Will make again w/different combos of icing and cake. Great recipe! Mixed by hand with a spoon in a bowl once the cake had cooled then made the balls, put them in the freezer then dipped.

Peanut Butter Vegetable Chicken Soup

healthy soup, but written as is this recipe is too bland and definitely needs more seasonings. I am not a fan of curry normally, but I thought that it would be good in here. Not my favorite chicken soup, okay, but I will try others before making this again.

Tuna Noodle Supreme

I loved this! My new favorite tuna casserole, glad I have this recipe going into Lent! Used 1/2 c of plain yogurt and 1 c of sour cream. Used egg noodles instead of pasta shells. Used 3/4 T. minced onion as a timesaver. Wish I would have had sweet red pepper but didn't, still yummy without it.

Oven Fried Chicken III

This was really easy and really good! A cheaper dish to make when you find the chicken on sale, too. Looks impressive. Perfect blend of seasonings (I was worried there would be too much pepper). The breast pieces were huge so baked those a little longer. Must drain on paper towels after baking. Only used about 1/2 c of mayo, spread it on with a knife and then rolled the chicken in seasonings in a med bowl. Worked great. One chicken (was about 5 lbs) needed a 9x13 pan plus an 11x7 pan.

Overnight Cinnamon Rolls II

the topping on these tasted like the cinnamon crunch bagel topping at St Louis Bread Co/Panera - yum! Used vanilla pudding, only used raisins on half of it. Turned out okay, was a little disappointed, definitely easy though. Made in 9x13 pan. Did not need icing on top, sweet enough without it.

Cheese, Broccoli, and Chicken Soup

Good! Liked that it uses fresh broccoli instead of frozen. Also only used 3 c of instant rice, glad I did not use 4! Might only try using 2 next time so it seems more like soup.

Apple Streusel Muffins

Easy and good. Gave these as a gift to the preschool teacher and a neighbor for Christmas. Instead of making the streusel topping just sprinkled on cinnamon and sugar, they were very good. Great recipe! Next time I would probably add nutmeg.

Pumpkin Chip Muffins

Made these for teacher and neighbor Christmas gifts, they were great. Used 1 c of oil, 1/2 c of applesauce, a little under 2 c of choc chips, only 1 & 1/2 c of sugar and they were plenty sweet. Would definitely use this recipe again!

Crispy Rosemary Chicken and Fries

I thought this was pretty good and easy, my dad would like this dish. Definitely use skin on, bone in thighs and you will be fine. People w/dry chicken are probably using skinless boneless chicken breasts. Kids ate it but hubby did not seem that excited about it so I don't know if I will make it again. Liked the potatoes, also made baby bella mushrooms in there, liked those in there, too.

Potato Cheese Soup

Definitely use less pepper (I used half of what was called for, still a little peppery) and used half of parsley called for, would do the same again. Cooked and mashed up my potatoes ahead of time, boiled the celery and carrot in the chicken broth (did not have veg. broth). Ended up adding canned corn to the soup for the kids and they liked it better that way. Good recipe, tasted great on a cool fall night.

Garlic Bubble Ring

Wasn't as good as I hoped it would be. There was WAY too much of the garlic mixture, don't make so much b/c you will be wasting good ingredients. Try making half of what it calls for. Probably will not make again.

Artichoke Dip I

Pretty yummy! Only baked this about 20-22 min instead of 30, worked great, was hot and melty enough and the cheese did not separate and look greasy as it did for some others. Super easy, too! Served w/ritz crackers. Used some leftovers on toasted bread w/thinly sliced tomatoes marinated in olive oil and balsamic vinegar on top under the broiler for 5 min (also added some Ital seasonings and a little extra parm on tomatoes) and it was great!

Apple Oatmeal Crisp

Made almost exactly as it says, LOVED this! Used a tablespoon or two extra of oatmeal, used about 1/2 wheat flour, used a little less brown sugar than called for and also a little less white sugar as some people were saying it did not need to be that sweet and mine turned out great. Loved how quick and easy this was.

Cottage Cheese Chicken Enchiladas

These were good although I think I like some other enchilada recipes from this site better. The enchilada sauce I bought at ALDI was pretty spicy. Only used half the amt of green chiles called for. 2nd time: used full amt of green chiles, plus added rotel tomatoes and jalapenos to half. well received by one kid. used torn corn tortillas on top and bottom and put all other ingedients together in middle like a casserole with other half of tortillas then sauce and cheese on top. Good that way, easier, too.
