Seminary Muffins

Doubled the recipe right off the bat, so glad I did! Only used 2/3 the amt of choc chips (mini), I think next time I will only use half the amt of choc chips called for and it will be enough. Also will put in some whole wheat flour next time, don't know why I did not this time. Sprinkled some oats on top to make them look pretty. Very good muffin, my kids thought these rocked!

World's Best Pasta Sauce!

Loved this recipe. I did make changes based on what I had in my pantry so stop reading if you want to know how it turns out if followed exactly! Used 1 28 oz can of petite diced tomatoes (drained the can off), omitted the paste (had none), used 2 tsp of Ital seasoning on accident, used garlic salt in place of regular and equiv of 1 clove of minced garlic, used minced onion from spice rack (1 1/2 T)to save time, omitted ground beef, omitted water, omitted fennel - it is in sausage anyway. Those were my changes, but this was a great recipe to use as a base. The kids loved it and they normally do not like spaghetti sauce!

Peanut Butter and Banana French Toast

No Roll Sugar Cookies

Followed directions exactly...these remind me of the cookies my grandma used to make. My kids love them. Did not ice them, just rolled them in decorator sugar so they look pretty.

Giant Chocolate Chip Cookie

Original Nestle® Toll House® Chocolate Chip Pan Cookie

Delicious, of course! One thing I don't think I saw on here that would be helpful for some is that if you have a dark pan you should adjust the temperature to 25 degrees lower than what the recipe says so you do not burn your cookies. Baked mine in a dark pan at 350 for 23-24 min and they turned out fine. They are a cake like bar and next time I might try baking them a few minutes less so they are chewier.

Mashed Sweet Potatoes by Jean Carper

Great easy recipe. Used maple syrup b/c I did not have amaretto. Left out the ginger (not usually a big fan) and they were great. I put my cut up, peeled sweet potatoes in a covered casserole dish for 3.5 min on high, then turned them and put them in again for same amt of time. Then they were perfect for mashing. I also put a little bit of water in with them when microwaving so they would not get dried out, drained it off before mashing. Worked great! I also did not use almonds b/c I was in a hurry but it would be pretty and I am sure taste great, maybe next time.

Sunday Morning Lemon Poppy Seed Pancakes

We loved these! Doubled the batch for our family, but only used 3 T. of sugar instead of 4, next time might try it with only 2 T and see how we like them. Used the zest of one lemon, did not really measure, but the pancakes were really good!

Loved this, made the chicken ahead of time to save time. Used bowtie pasta. The oldest child protested upon seeing it, tasted it and ended up asking for seconds. Success!

Roasted Garlic Cauliflower

Did not even use the pepper, I ate the entire head of cauliflower myself, it was so good....yes I was hungry, but it was sooo good! Don't think I even used 1/3 c of parm, just eyeballed it, love this recipe!

Maple Dill Carrots

I liked these. I used dried dill (little less than 1/2 tsp) and a little less than a 1/4 tsp of pepper and thought it was enough for 2 lbs of baby carrots - that was using 2 Tbs of br. sugar and 2 Tbs butter, 1/2 tsp of salt, although that could have been cut to 1/4 tsp. I boiled the carrots until they were tender enough for my 1 yr old to eat.

BBQ Pork for Sandwiches

Made this for our safari birthday party (except we called it BBQ'd Water Buffalo!). It was awesome. We bought 3 huge pork butts, cheaper cut, took a while cutting some fat off of them, threw them in the crock pot with beef broth (bouillon cube style), shredded with forks, drained the broth off put it in the fridge, reheated it the day of the party (putting sauce on right before people got there) and people cleaned this stuff up. About 5 or 6 people asked me how to make it. Used Super Smokers sauce (original recipe), everyone loved it.
