Artichoke Spinach Dip

We loved this! Used 2 pkg cream cheese, 1 16 oz ctn sour cream, 1 pkg frozen spinach, 2 cans of artichokes. Sauteed some onion and garlic on stove first before adding spinach and artichokes, and did not use the garlic salt. Very yummy, even spread some leftovers on pizza crust later on and it was really good that way. Could probably bake it if you wanted to.

Upside Down Pumpkin Cake

Liked this recipe b/c it has twice the pumpkin as some of the others out there. Added 1/2 tsp allspice, 1/2 tsp nutmeg. Accidentally used chopped walnuts, but still good.

Chocolate Earthquake Cake I

If you want to know what it is like, it is like making a German chocolate cake and the frosting ends up on the bottom of the pan. Was not messy in my opinion. I only used around 3 c of sugar. Had to bake for 50 min or so b/c it was really jiggly yet at 42. Easy to make, really yummy! Got rave reviews when I took it to someone's house for dinner. Will definitely make this again!

Chocolate Chocolate Chip Cookies I

DELICIOUS AND RICH! Added m&m's to some of the cookies per my son's request. Did not add as many chips as called for, may have only used about 1 1/4 cups or so. Did use nuts, they were good in there. Also used 1 c of brown sugar instead of 1 1/2 c of white sugar, turned out great that way, will do that again. 9 min was about perfect in our oven. Refrigerated batter when I wasn't using it to keep it from getting soft, but it was a really stiff batter.

Pork and Green Chile Casserole

This was good, liked having a new way to use some leftover pork roast. Used two 10 oz cans of tomatoes w/green chiles already added and did not add any additional green chiles. Also just spooned hot mixture into tortilla and put cheese on top, did not put it in the oven.

Easy Slow Cooker French Dip

this was okay, would give it 3.5 if I could, very easy, which I like. Did not add the beef broth b/c I thought that would be way too much sodium since there was already the onion soup in there. Was still good, but some other french dips are better so it did not get four or five from me. Would still make it again b/c it uses ingredients I had on hand and everyone ate it. served on rolls with swiss or provolone cheese melted on it.

Corn and Black Bean Salad

Made this to bring on a camping trip, was easy to make ahead. One of those you like it or you hate it things. Went over great with some people. I liked it, my husband of course, hated it due to the cilantro. Easy, tasty and healthy, I will give it four stars b/c there is a corn/bean salad I like better than this one.

Rosemary Ranch Chicken Kabobs

AWESOME! Used only about 1/3 c of dressing and oil b/c I did not have any more dressing than that, cut back on all other ingredients in marinade, too. Seems like you are always dumping out marinade anyway. Glad I did, it ended up being plenty for the amt of meat. Forgot to put in the sugar, it came out great though. Omitted the salt, there was plenty in the dressing I figured. Used dried rosemary, only a little over a tsp of it. Had in the marinade for approx 1 1/4 hrs or so. The kids, who normally complain about chicken, scarfed this right down. Will definitely make again! Soaked my skewers in H2O for a few hours but they still got burnt on the ends, oh well, no matter, the chicken was awesome.

Fresh Southern Peach Cobbler

Followed recipe, loved the results. Don't listen to those who say it is too sweet (I used a tad less than the called for amt of sugar mixture on top) - it is not too sweet. Also don't listen to review on the cake like cobbler, this is what I think peach cobbler should be, wasn't that cakey, had a very large fruit layer, fairly thin, crusty cobbler topping. Best time to eat it is of course, while it is still warm from the oven! I used 10 peaches because I had plenty to use and some of mine were sort of small I thought and it turned out great.
