Mexican Casserole

Reviewed: Jul. 11, 2013
My 5 year old said, "Mom, this is stinkin' awesome!" which is actually a compliment - ha! The first night he really complained about eating it but he had to if he wanted any dessert and then he realized he loved it! I used a can of black beans and a can of kidney beans, an entire jar of mild salsa, frozen corn, chopped up some tomato I had on hand, used sharp cheddar (what I had), and we served this with sour cream. Also used dark meat from 3 or 4 boneless skinless chicken thighs I had cooked up (cheaper) and that worked great. Will definitely make again!

Orzo and Rice

Reviewed: Jun. 22, 2013
This is a good dish for extremely picky eaters because it is very bland - no flavors to offend anyone here to speak of. Had some orzo and rice in the cabinet so this landed on the menu - thanks for the recipe, my kids really enjoyed it!

Spinach and Mushroom Quesadillas

I enjoyed these, and they were pretty easy, too! Did not use port. caps but instead chopped button mushrooms and they were yummy. Nice meal to add to the meatless rotation.

Mini Chocolate Chip Pumpkin Muffins

My four year old says he would give these 10 out of five stars, ha ha. Made mini muffins, wish allrecipes had more recipes for those, wonder why they changed the format?

Peanut Butter Noodles

Made it without the spiciness and using ginger powder from my spice cabinet and I thought it turned out good. Also did not have green onion, but the kids would probably have objected to that, too! Liked it, will make again.

Artichoke Spinach Dip

Reviewed: Dec. 21, 2012
We loved this! Used 2 pkg cream cheese, 1 16 oz ctn sour cream, 1 pkg frozen spinach, 2 cans of artichokes. Sauteed some onion and garlic on stove first before adding spinach and artichokes, and did not use the garlic salt. Very yummy, even spread some leftovers on pizza crust later on and it was really good that way. Could probably bake it if you wanted to.

Upside Down Pumpkin Cake

Reviewed: Dec. 11, 2012
Liked this recipe b/c it has twice the pumpkin as some of the others out there. Added 1/2 tsp allspice, 1/2 tsp nutmeg. Accidentally used chopped walnuts, but still good.

Chocolate Earthquake Cake I

Reviewed: Dec. 8, 2012
If you want to know what it is like, it is like making a German chocolate cake and the frosting ends up on the bottom of the pan. Was not messy in my opinion. I only used around 3 c of sugar. Had to bake for 50 min or so b/c it was really jiggly yet at 42. Easy to make, really yummy! Got rave reviews when I took it to someone's house for dinner. Will definitely make this again!

Chocolate Chocolate Chip Cookies I

Reviewed: Nov. 8, 2012
DELICIOUS AND RICH! Added m&m's to some of the cookies per my son's request. Did not add as many chips as called for, may have only used about 1 1/4 cups or so. Did use nuts, they were good in there. Also used 1 c of brown sugar instead of 1 1/2 c of white sugar, turned out great that way, will do that again. 9 min was about perfect in our oven. Refrigerated batter when I wasn't using it to keep it from getting soft, but it was a really stiff batter.

Would be willing to try again with fresh parsley but my family wasn't overly excited with this dish. My four year old said, "Mom, this isn't very good."
