Cheryl's Spinach Cheesy Pasta Casserole

Yum! I used the bigger seashell pasta shells. I only used 1 tblsp of olive oil & ended up using 2 jars of spaghetti sauce. Also, I only used about 1 cup of cheddar cheese and a little over 2 c of mozzarella (had a little left in one bag, so it went in). Everyone loved this!

Crustless Spinach Quiche

Only made a change of cheese - used half cheddar and half Italian blend. My family loved this - the 1 yr old and almost 3 yr old cleaned their plates and wanted seconds! Also adding this to our Lenten rotation next year!

Fruit Salad in Seconds

Easy and really good. Served this at a baby shower and had someone ask for the recipe. Instead of strawberry yogurt I used lemon, but strawberry would be good, too.

Cranberry Orange Cookies

We loved these. Did not make the icing - they were great just as they were. My 2 year old loved these the most out of all the Christmas cookies we made, which was great because they were probably the healthiest cookie on the tray!

Brown Sugar Oatmeal Pancakes

These are great! Definitely cook on low heat, but a fairly healthy pancake that tastes awesome. The only thing I did differently was add 1/2 tsp vanilla (which was more than enough), and it may have not needed it, will try without next time and I am sure they will be good that way, too. May try adding some berries next time as the kids love that.

Chewy Chocolate Chip Oatmeal Cookies

I am giving this rating based on the recipe, not based on altering the recipe after reading a hundred reviews. These cookies tasted good, but I needed to add a few minutes to the baking time. I let the cookies on the pan for five or more minutes to cool, but these things still fell apart and we will be eating the crumbs with spoons. The only thing I did differently was omit the nuts (I have a one year old and there are nut allergies in the family) and only use 1/2 tsp salt - and I don't believe those changes caused the cookies to fall apart on me or the baking time to be wrong. I think I will be trying some of the other highly rated chocolate chip cookie recipes on this site before using this one again.

Spaghetti Salad

Didn't have the avocado it called for, but it was good. For the onion I used green onion, sometimes red onions are too overpowering. I may try this w/French salad dressing - sounds weird but I had it somewhere like that once and it rocked. Update: Tried it with mostly French and a little Italian (for the seasoning) and it was great! Try it - our company raved about it.

Sweet Potato Pineapple Casserole

This was easy to make and my family did eat it, but personally I think the sweet potatoes with the brown sugar sauce and marshmallows on top is way way better. So if you like that a lot, you might be a little disappointed with this. I thought this needed a little more of something, not sure what.

Beautiful, easy, and a big hit at parties! The only change I made with the recipe was to use pound cake instead of angel food, but that is just b/c it is what I had on hand. Thanks for the great recipe!
