Whole Wheat Pumpkin-Applesauce Muffins

I used a little less white sugar since I had sweetened applesauce but otherwise followed the recipe. These were great! Love good recipes for whole wheat flour!

Jalapeno Popper Spread

Sturdy Whipped Cream Frosting

This is good for fans of frosting that is not very sweet. I never could get mine past the Cool Whip consistency like another reviewer. It made a lot, that is a good part about this recipe. There are better frosting recipes out there as far as I'm concerned.

Mexican Bean Salad

I thought this was great. Granted, there are several in my family that are not cold bean salad type of people, so I did have leftovers. Didn't add the cilantro as several family members aren't fans. I like these make ahead recipes for parties! Gave out the recipe, so always a good sign!

You've Gotta Be Kidding Onions

The 'You've got to be kidding' part of this recipe is because these are terrible! Don't waste your time. I was sucked in by the good reviews, but these were a disappointment. Glad I only made a half batch - these were not a hit.

Cinnamon Roasted Sweet Potatoes

These were delicious! I used 3 good-sized sweet potatoes, sliced about 1/4 in. thick. I thought the baking time was a little off, 30 minutes was not near long enough, but maybe their potato pieces were smaller. I also used approx 1/4 c of oil and did not have a problem with them being greasy like some others did. I did not pour the oil in and bake first, rather I tossed them in a bowl with the oil and then baked. Did not try the lime juice, but would like to. Without it they are great, so don't let not having lime juice stop you from trying the recipe.

We really liked this - put ours in the crock pot and it of course came out tender. Added a little more brown sugar and Worcestershire than it called for.

Sesame Beef

We liked this a lot. I think next time we'll add 32 oz of stir fry veggies (used frozen kind to save time) instead of just 16. I used regular onions instead of green and forgot to put in the sesame seeds. Also used sesame oil.

Orange Pecan French Toast

Served at a baby shower brunch, had people asking for the recipe, so that tells you something! Easy and loved the fact that you can make it the night before. Made as is, so if you think you need to read 100 reviews to see if you need to make changes, stop reading and just go make it now. It was great!

Amish Breakfast Casserole

Served it for a baby shower brunch, it was great! Used a combo of cheddar and colby jack cheese instead of using swiss, it was really good that way. Added mushrooms and green pepper, plus salt and pepper. Made one with bacon, one with sausage.

Joel's Jerk Chicken Pineapple Pasta

This was great - my hubby normally does not like fruit/meat combos but he ate this right up. Since I have small children I used a little less of the jerk seasoning and omitted the red pepper in their servings. I also only used half of the red pepper seasoning and half of the cinnamon and liked it that way. I might try it with rice, but the pasta was good.

Banana Cream Cheese Pie

This was good, but I wasn't blown away by this dessert by any means. It is easy and quick, so it has that going for it. I think I'd probably try out new banana/ strawberry desserts before making this one again, though.

This worked out great - easy and perfect for decorating. No problems making it, followed the recipe exactly. Does taste a lot like the icing on the store bought cakes though.
