Iced Pumpkin Cookies

Cinnamon Rolls II

1st time making cinnamon rolls - they turned out even though we were sure we'd messed them up. We added more flour to dough in mixer, maybe a little under 3/4 cup extra? Kneaded in the electric mixer w/bread hook for a little over 10 min and let dough rise in the bowl on the counter for 4 hours. Probably only used 1 1/2 c of brown sugar mixture but did add a little extra cinnamon and some chopped pecans. We rolled them out, had to add little more flour but not much at all and then baked them for about 16 min. Drizzled w/icing (powdered sugar+milk+vanilla) and we were done! Made two 13x9 in pans + an 8 in square pan + a custard cup!

Fried Cabbage and Egg Noodles

Don't make this if you aren't absolutely crazy about cooked cabbage. I had my hopes too high for my kids liking this. Fine if you for sure like cooked cabbage, doubt we will make this again though. Did make as directed.

Quick and Easy Sauteed Spinach

Easy, healthy, delish! The 2nd time I made this I thought it was way too salty and I did not even add the full amt of garlic salt called for. I also checked it after the first 5 min on med heat and it was browning so I put it on low heat for the last 5 min so it wouldn't be burned.

At this point I can't really compare this to other lemon pies b/c I haven't made any others or don't eat them much. I think this has great flavor though, would make it again.

Chocolate Crunch Pie

I beat the eggs w/a wire whisk for 2 min, did not use a hand mixer, that is the only thing I can think of that I could have done differently b/c I followed the directions otherwise. Maybe it should be for 1 pie instead of 2? I had 2 very short pies from this which I 'saved' by mixing 2 c of milk w/ 2 small boxes of instant choc pudding + an 8oz carton of whipped topping. They tasted good, but this recipe is off somewhere!

Penne Pasta with Spinach and Bacon

I wasn't very impressed by this, won't make it again. I had to slowly plow through this entire batch for my lunch all week so it wouldn't go to waste. No one in my family would eat it. I followed the directions exactly. Sprinkling w/Parmesan cheese is definitely helpful to do on this one.

Best Big, Fat, Chewy Chocolate Chip Cookie

I had to bake these for 16-17 min, definitely not 20 in my oven. They stiffened up already on the first day, so if you like a crispier cookie for dunking this is it. Also did not use the full amt of vanilla and only used 3/4 of the choc chips called for and it was plenty.

Oatmeal and Wheat Flour Blueberry Pancakes

Loved these pancakes! Healthier but still very yummy. I subbed canola oil for olive and reg milk for soy but it does not affect how the recipe turns out - will use this one again and again! Added slightly more blueberries than this called for.

The only thing I did differently was to add 1/4 tsp vanilla b/c I like that in my pancakes and I did not thaw the berries. Also did not wait to cook and they were awesome. My favorite blueberry pancake recipe.

Big Soft Ginger Cookies

These taste like the holidays! DO NOT smash these down unless you have refrigerated the dough for a looong time and it is really stiff. I did and my dough was too soft - disaster!
