Baby Spinach Omelet

These were so healthy and easy. I do prefer them without the nutmeg though. Next time I might try using cheddar cheese and salsa. Mushrooms would be good in there, too.

Easy Cream Cheese Danish

The best! Serve with fresh strawberries, it is excellent that way. Did not use nearly all of glaze. Could probably add more crescent rolls and put in a jelly roll pan and try stretching amount of cream cheese filling. Got rave reviews from everyone!

French Dip Sandwiches

Keeping this recipe, it is great! To cut down on sodium I did use only 1/2 of soy sauce called for and it was still a great aus jus for dipping.

Baked Asparagus with Balsamic Butter Sauce

Yum!!!!!!!!!!! My favorite way to make asparagus so far. Easy! This sauce would also taste great w/steak. Used a 13x9 pan & sea salt instead of regular.

Strawberry Dream Pie

This is easy but it isn't anything exceptional. The top part is WAY too runny, you need to use it as a sauce served on top. Easy recipe to fall back on if you have to make something fast and you have berries on hand. The people I served it to all seemed to like it, but I just think this recipe as it is written is not the best.

Chicken Enchiladas I

Followed the recipe for the most part, had to make a few subs b/c I didn't feel like running to the store. Used green chilies instead of green pepper. Instead of using water and tomato sauce I used salsa, just added till it looked right. Put 8 of them in my big pan, used 16 oz of taco sauce instead of 12. We LOVED these - tasted and smelled great. Put refried beans in some of them b/c I was running low on meat mixture and we really liked them like that plus it is healthier, will do that for all of them next time.

Apple Raisin Cakes

Added a little nutmeg b/c I thought that sounded good but other than that followed the recipe exactly. This recipe turned out great! Healthy, easy, delicious! For anyone that said these were bland they need to get their taste buds checked out - the applesauce, cinnamon and raisins give lots of flavor.

Slow Cooker Beef Stew I

Next time I think I will add more pepper...also I think it would be good to wait to add the veggies so they aren't so mushy. Hubby said he'd eat it again, but I think I will check it earlier in the cooking time tso it won't be overdone.

Yum! Liked this better than recipe w/sour cream in it. Baked it in the crockpot insert then put that in crockpot to keep it warm. Everyone loved this. Served w/triscuit thin crackers.

Slow Cooker Italian Beef for Sandwiches

Yum! I didn't have the onion salt or the bay leaf and it still turned out awesome. Instead of water I added condensed french onion soup and a 12 oz beer. Everyone raved about it!

Pumpkin Cake II

I had 1 substitution: used 1 c unsweetened applesauce instead of 1 c of the oil. Also sprinkled in some nutmeg and cloves. This should have been called pumpkin bread instead of cake. It is excellent, will probably use this again.

Cheesy Sliced Potatoes

Sooo glad I found this recipe - will use this one again for sure! Easy and fast way to make great tasting potatoes. I scaled the recipe back to 6 servings for our fam & used a 2 qt dish and it made more than enough, but the leftovers will be great. Next time I should peel the potatoes, though. Could also get by with using a little less sour cream than the recipe calls for.

Cinnamon Rolls II

1st time making cinnamon rolls - they turned out even though we were sure we'd messed them up. We added more flour to dough in mixer, maybe a little under 3/4 cup extra? Kneaded in the electric mixer w/bread hook for a little over 10 min and let dough rise in the bowl on the counter for 4 hours. Probably only used 1 1/2 c of brown sugar mixture but did add a little extra cinnamon and some chopped pecans. We rolled them out, had to add little more flour but not much at all and then baked them for about 16 min. Drizzled w/icing (powdered sugar+milk+vanilla) and we were done! Made two 13x9 in pans + an 8 in square pan + a custard cup!
