Baked Sweet Potatoes

Made this and chopped them into small 1 in pieces. Put oregano on only half of the pan, the other half had only sea salt on it. Everyone liked these. Easy! Made 5 sweet potatoes the first time. I liked the ones with oregano a lot. I did not measure it out, just sprinkled it on. Also baked it at 400 and stirred it around a little during baking and put it on the jelly roll pan.

Baked Denver Omelet

Very good, I have made variations and these always go over well. Liked the tip on sauteing the veggies in the pan in the oven first, smart! I added some all-purpose seasoning salt, and also some chopped tomatoes to my section of the pan.

Chocolate Chocolate Chip Cake Cookies

I made these because I had unsalted butter and no brown sugar. Glad that was the case, these were soooo yummy! Did not have a problem with flat cookies. I did add about a half tsp of baking powder, only change I made.

Creamy Chicken and Wild Rice Soup

Not really a review, but my record for myself for what I did so I know how to get a great pot of soup again! Kids loved it. Cooked 1 c of long grain wild rice (not a seasoned packet) according to directions and set aside. I chopped 1/2 an onion and sauteed it with 3 stalks chopped celery in olive oil and butter. Added 2 tsp garlic to that. Had 3 long chopped carrots (about 18 baby) cooking in 4 c of chicken broth till tender. Added about 1 1/2-2 c of chopped cooked chicken that I had on hand to the broth, then added celery and onion. Made a roux by melting 1/2 c butter in skillet, stirring in seasonings: poultry seasoning, white pepper, herb chicken seasoning and chopped fresh parsley, along with about 2/3 c of flour. Then added about 2/3 c of heavy cream to that. Stir rice and roux into soup mixture. Was a hit!

Chocolate Crinkles II

Make sure to put the bowl in the freezer, not just the fridge. And also put it in the freezer in between batches - the dough gets VERY STICKY! Turned out great though.

Best Toffee Ever - Super Easy

used almonds. This was beautiful. And delicious! Takes a long time for it to start boiling. Used two cookie sheets with parchment paper and tried to spread it out as thin as possible. Used the plastic idea for smearing out the chocolate.

Wanda's Chicken Noodle Bake

I used extra celery and sauteed fresh carrots with the celery because I had them on hand. Nice recipe because you can easily cut back on the meat if you want to do so and up the veggies more. My kids ate this really well without complaining and I liked that it used real cheddar cheese instead of Velveeta. I sprinkled a few Panko crumbs on top instead of the regular style bread crumbs. Didn't add any salt because you don't need to with canned soup having plenty in there.

Sauteed Garlic Asparagus

Must be careful not to get it overdone (in my opinion). Anything over 10 min (at least on my stove) would be way too much. If you add balsamic as another reviewer suggests, do that at the end. We like it roasted a lot more which is why this only gets 3 from me. Okay, but not the best way to fix it.

Pumpkin Muffins with Streusel Topping

Made these with my oldest daughter and we had fun doing that :) Used only one cup of brown sugar (not packed hard) and omitted white sugar. Used 1/3 c of oil and subbed applesauce for rest of oil. Used 2 t of pumpkin pie spice and the rest a combo of cinnamon, allspice, nutmeg, and cloves. Did not make topping. We loved these!

Chicken with Quinoa and Veggies

I tried this before adding the lime juice and will definitely leave that out next time, better without in our opinion. Gave it a weird tang. I just mixed quinoa in at the end and liked this all in one bowl meal. Can also cut back on meat and up veggies to make healthier. May look at other reviews for ideas on different seasonings.

Spinach Frittata

I liked this, my family did not. I added old bay seasoning along with the salt and pepper. Had green pepper sauteed with the onion, then added eggs and spinach and cheese (used mozzarella). Yummy.
