Peanut Butter Pie I

Used a pretzel crust and subbed stevia for the sugar and reduced fat cream cheese for the regular. I was craving a peanut butter pie flavored dip to eat with pretzels, then decided I wanted pie. This is rich and creamy and sets up like a dream. I had to add a bit more liquid to the peanut butter and cream cheese due to my sugar free option, but tasty. Thanks for sharing.

Quinoa and Black Beans

Good, but I feel like this is missing something flavor wise. Used peas since I don't eat corn often. Added hot sauce, then used this as burrito filling with a tequila lime salsa in tomato low carb tortillas. This makes a lot if you're using it this way. I'll make this again.

Homemade Crispy Seasoned French Fries

These were great! I did change it a bit, by not measuring the seasonings, and I tossed the potato wedges in the seasoned flour mixture before adding water to make a batter so that it would adhere to the slices better. I'll try this method for fish and chicken tenders some time as well. Both my kids ate these, so winner winner in my book.

Sourdough Buckwheat Pancakes

I accidentally used baking powder rather than soda (my bad), but these were fantastically fluffy cakes due to this! ;-) I'll cut back on the ginger next time. A bit overpowering. I used all buckwheat flour for this and added cinnamon. My big round waffle maker made 4 huge, fluffy waffles, and each one is a meal. Topped with sugar free blackberry jam. Advice: do not over-mix your batter. Buckwheat gets gluey very easily. Mix everything else then fold in the buckwheat flour and try not to mix more than you have to when incorporating.

Tasty Breaded Seitan

Really good! My first experience with seitan. Used a homemade version off a different site, but this crisped up and was very chicken patty-ish on a bun with low sugar ketchup.

Butternut Squash and Turnip Soup

Not bad! I didn't measure my veg, but used one whole small squash and the 4 turnips I had. Following advice I added 4 oz cream cheese and buzzed this with the immersion blender before serving.

I used bacon in this and cut the recipe back to fit in a 9x13 pan. We felt it needed a little salt, but this was really good. Comfort food like a cross between mashed potato and a hash brown casserole. I'm going to try crying the slices with breakfast tomorrow as per the suggestion.

Sweet Dijon Salad Dressing

Yum! I used a spicy brown mustard to tone down the horseradish flavor I find too strong in dijon. Buzzed this in the magic bullet. Serving this tonight with baby spinach. Thanks for sharing.

Chicken Claridge Stew

Had this tonight. I love the seasonings in this soup. I changed based on diet restrictions, so no cream soups. I love that the veg can change in this too. I used carrot, onion, celery, and baby sweet peppers that needed to be used. The recipe didn't specify, but I did not drain my tomatoes. I started this with frozen chicken breast that I threw in when I added liquid and let them cook in the broth before dicing. I needed a cup more liquid but as I upped the veg amounts that isn't the fault of the recipe. Thanks for sharing.

Spanish Rice II

Made this for my carb loving husband with a Mexican themed dinner. I subbed chicken broth for the water, and only had a can each of chiles and diced tomatoes rather than Rotel. Great flavor, but keep an eye on the clock. Mine went over time by a minute or two and was a little soft. My own fault, and I'll still make it again and not get distracted. Thanks for sharing.

Roasted Okra

Broccoli Beef I

Wonderful! I used venison rather than beef, and frozen broccoli. Like others mentioned, I upped the garlic and used dried ginger, about a half a teaspoon. To cut way back on carbs, rather than flour, I mixed the other ingredients for the sauce, let it reduce, then thickened with a half teaspoon of guar gum whisked in before removing from heat and serving. Will make this one again. Thanks for sharing.

Venison Gyros

This was great! I did use ground venison like a previous reviewer. I made meatballs with this recipe, then after baking I simmered in beef broth with garlic, onion, and oregano. For low carb I dipped these in a yogurt sauce. My husband ate them in a pita bread with extra onion and peppers.

Spicy Garlic Lime Chicken

Had this tonight and I disagree with those who said there weren't enough spices to cover 4 pieces of chicken. I had exactly the right amount. My only change was to use 2 teaspoons of jarred minced garlic rather than powder. I love the way this sauce reduces and lightly coats the chicken. My 9 year old liked this and said he didn't find it too spicy, and he doesn't like spicy foods at all. This is definitely going to be made again. Thanks for sharing.

Kalua Pig in a Slow Cooker

We loved this. I didn't find it too salty at all but definitely didn't need to add seasoning either. I had to bail the grease out halfway thru cooking due to the fatty cut of meat. Fall apart tender roast. Thanks for sharing. Will make this again. I found Hawaiian sea salt cheap at cost plus after looking everywhere for it, if that helps.

Slow Cooker Buffalo Chicken Sandwiches

Delish! Added a couple more pcs of chicken so I had a bit too much liquid. When I make this again I'll spring for fresh rather than frozen chicken so this isn't so wet. The flavor was heavenly tho. I added some cream cheese to the left overs and used this as Buffalo chicken dip. Thanks for sharing.

Crispy Fish Fillets

Breaded cod wedges with this yesterday for dinner and it was fantastic. Cooked it in an electric skillet set to about 375' rather than worrying about if I had the burner at the right temp. I love the zing the mustard gave this, because I was worried it might be too much. The flavor was perfect, and my husband was able to douse this in the malt vin he loves and it went well together. My only change was to take the advice of other reviews and shake this in flour before breading. This was crispy enough with the single coating of breading. For my tastes, double battering would have been too much. Thanks for sharing.

The Ultimate Burger Topping

Fantastic on burgers and grilled pork. Forgot to rate a while back. I subbed with what was on hand, so I used precooked bacon crumbles, dried minced onion (no fresh in the house), and left out the saute part. I also used a home made mayo rather than store bought. Let this sit in the fridge for a few hours before dinner and it was great. Can't wait to try this with the caramelized onion and garlic per the recipe. Used Gorgonzola for the blue cheese. Thanks for sharing.
