Spanish Rice II

Made this for my carb loving husband with a Mexican themed dinner. I subbed chicken broth for the water, and only had a can each of chiles and diced tomatoes rather than Rotel. Great flavor, but keep an eye on the clock. Mine went over time by a minute or two and was a little soft. My own fault, and I'll still make it again and not get distracted. Thanks for sharing.

Lemon Garlic Tilapia

Delicious and easy. Followed the review suggesting that the garlic be sautéed in the butter. Used half trans fat free margarine and half olive oil. Will Make this again.

Roasted Okra

Really good! I wouldn't have thought to cook okra this way and it turned out really yummy. I added a bit of diced onion before roasting. Used frozen okra and it was fine. Thanks for sharing.

Broccoli Beef I

Wonderful! I used venison rather than beef, and frozen broccoli. Like others mentioned, I upped the garlic and used dried ginger, about a half a teaspoon. To cut way back on carbs, rather than flour, I mixed the other ingredients for the sauce, let it reduce, then thickened with a half teaspoon of guar gum whisked in before removing from heat and serving. Will make this one again. Thanks for sharing.

Venison Gyros

This was great! I did use ground venison like a previous reviewer. I made meatballs with this recipe, then after baking I simmered in beef broth with garlic, onion, and oregano. For low carb I dipped these in a yogurt sauce. My husband ate them in a pita bread with extra onion and peppers.

Spicy Garlic Lime Chicken

Had this tonight and I disagree with those who said there weren't enough spices to cover 4 pieces of chicken. I had exactly the right amount. My only change was to use 2 teaspoons of jarred minced garlic rather than powder. I love the way this sauce reduces and lightly coats the chicken. My 9 year old liked this and said he didn't find it too spicy, and he doesn't like spicy foods at all. This is definitely going to be made again. Thanks for sharing.

Kalua Pig in a Slow Cooker

We loved this. I didn't find it too salty at all but definitely didn't need to add seasoning either. I had to bail the grease out halfway thru cooking due to the fatty cut of meat. Fall apart tender roast. Thanks for sharing. Will make this again. I found Hawaiian sea salt cheap at cost plus after looking everywhere for it, if that helps.

Slow Cooker Buffalo Chicken Sandwiches

Delish! Added a couple more pcs of chicken so I had a bit too much liquid. When I make this again I'll spring for fresh rather than frozen chicken so this isn't so wet. The flavor was heavenly tho. I added some cream cheese to the left overs and used this as Buffalo chicken dip. Thanks for sharing.

Crispy Fish Fillets

Breaded cod wedges with this yesterday for dinner and it was fantastic. Cooked it in an electric skillet set to about 375' rather than worrying about if I had the burner at the right temp. I love the zing the mustard gave this, because I was worried it might be too much. The flavor was perfect, and my husband was able to douse this in the malt vin he loves and it went well together. My only change was to take the advice of other reviews and shake this in flour before breading. This was crispy enough with the single coating of breading. For my tastes, double battering would have been too much. Thanks for sharing.

The Ultimate Burger Topping

Fantastic on burgers and grilled pork. Forgot to rate a while back. I subbed with what was on hand, so I used precooked bacon crumbles, dried minced onion (no fresh in the house), and left out the saute part. I also used a home made mayo rather than store bought. Let this sit in the fridge for a few hours before dinner and it was great. Can't wait to try this with the caramelized onion and garlic per the recipe. Used Gorgonzola for the blue cheese. Thanks for sharing.

Slow Cooker Carolina BBQ

This turned out really well for us. I used a pork loin, and rubbed it with liquid smoke as well as hickory smoked salt and pepper, then loosely topped with aluminum foil in the slow cooker while cooking. I was pressed for time, so I cooked this on high for about 4 hours, then low for about 3 1/2 before shredding. Had I had more smoke flavor, this would have reminded me of when my dad dug a pit and slow cooked a pig when I was little. Fall apart tender and delicious. The vinegar smell was noticeable during the day, but not overpowering. Served this on homemade onion rolls with from scratch honey/molasses barbecue sauce for topping. Thanks for sharing.

Soft Onion Sandwich Rolls

Very good, and very easy. I did have a bit of trouble getting mine to make bun shapes, so only two of them were actually round, but tasty all the same. I'll cut back a bit on the onion to my tastes next time. Used butter flavor shortening rather than butter because I'm lazy and butter was in the fridge. Used evaporated milk in the dough, as well as mixed with my egg white for topping. Dough is a treat to work with after the dough cycle, altho I did have to add a bit of milk to this during the mix cycle, but my flour is ultragrain, so it's a touch dry. Thanks for sharing!

Juicy Lucy Burgers

OMG, this is the best burger I have ever cooked! I did cut fat a bit by using 97% lean beef, and had 2 pounds to use, so upped the ingredients accordingly then followed the recipe. Got 6 huge burgers out of this. I do have to say that a little warning on the "taste explosion" factor that coated my chin, fingers, shirt, etc. would have been nice, but didn't decrease the flavor. ;-) Served with Kumato tomato, lettuce, avocado, and assorted other toppings. Thanks so much for sharing. Would have never found this one on my own-- did a search for most popular burger and this was one of them. On a side note, I did put the patties down on parchment and rolled them very thin with a rolling pin, then put the cheese in the middle, rolled up the edges and pressed it back to a uniform thickness so these would cook all the way through.

Slow Cooker Chicken Chili with Greens and Beans

I really enjoyed this, but hubby complained about the kale while he ate a big bowl... So normal meal times in my house! I modified the recipe based on what I had, but I think still stayed true to recipe. I had dry white beans, so I started them in the crock pot the night before with some chicken broth, and added the onion and garlic (no garlic and herb seasoning), half the chili powder, and a generous amount of cumin. The next morning I proceeded with the recipe as written, adding kale, the rest of the chili powder, etc., and letting it slow cook for about 6 1/2 more hours. I did use fresh kale, about 4 or 5 cups, rather than frozen pre-cooked, and left out the salt because of all the broth I used. Because of dietary issues, I also subbed a brick of softened low fat cream cheese for the cream. Saved on fat, and the blood sugar problems of lactose. I garnished with a shredded queso and sliced avocado. Thanks for sharing! And tho the recipe didn't specify, I did not drain my tomatoes when I added them.

Buckwheat and Bacon Side Dish

I had this last night with dinner and loved it! I think with a few more veggies this could be a main dish rather than a side, but would be more like 1 serving than 2. I used 4 pieces of turkey bacon, and added about a cup of diced baby carrots to the onions while I caramelized them a bit. I had to use onion rather than shallots, since that's what I had, then I totally forgot to add either parsley or pepper at the end and this was still delicious. My husband doesn't like the earthy/strong flavor of buckwheat, but I thought it was great, and it didn't spike my blood sugar levels like a lot of "grainy" things can. (Yes, I know this is a seed...) I'll definitely make this again. Thanks for sharing.

Bacon Feta Beans

We had this last night and it's fantastic! My new favorite way to make green beans. I did cheat and use canned beans, since I wanted to try this and had no frozen or fresh. I just sauteed them in olive oil (2 1/2 cans) rather than bacon grease, then added garlic to the beans and proceeded with the recipe. I used a handful of pre-cooked bacon crumbles stirred in with the feta. I'll be making this often in our house, as it was a favorite. Thanks for sharing.

Cheesy Cornbread Casserole

Pretty good weeknight dinner. I had to sub picante sauce, but otherwise followed the recipe. I don't care much for ground beef casseroles, but this one was ok to me, and wonderful for hubby. He has asked me to keep things on hand to make this again. LOVE the cheese baked into the crust. I didn't use a 9x13 pan, but just used the straight side 10 inch skillet I browned the meat in.

Taylor's Piroshki

Hubby and I made these for dinner tonight. The dough is a dream to work with, once I added about 3/4 of a cup more flour. Mixed in the KitchenAid. I did cheat a bit, as we made these more calzone sized for dinner, and left out the dill, as my husband hates it. We did add a bit of shredded cheese and sliced olives. Delish! Hopefully, these freeze well, as we had some leftover that I haven't cooked yet. Perfect ratio of dough to filling. Thanks for sharing!

Chocolate Chip Pumpkin Bread

I really enjoyed this. Subbed half brown sugar for the 3 cups. Rather than 3 loaf pans, I put this all in a 9x13 cake pan and baked for about an hour and a half total, checking every 10 minutes after the initial hour for doneness. I then poked holes in it and topped with an almond flavored powdered sugar glaze. At first I thought it was too seasoned, but the next day-- my, oh my, was it good! Very moist thanks to the oil and pumpkin. Might try to sub apple sauce for some oil next time. Thanks for a great recipe.

Joe's Incredible Bacon Pumpkin Pie

Loved this idea! I've had this recipe saved for years and haven't had the crowd to brave making it in case it didn't go over well. Made it this year at Easter, and while there were some afraid to try it, the more adventurous really enjoyed it. I cut the recipe in half to make one pie. I liked the dense filling, with the cream cheese, but I personally found this over-spiced for my tastes. I'll try it again with less pie spices. I did crumble most of the bacon inside the pie before baking, then topped with more crumbled bacon around the edges. Will try again, and serve with maple flavored whipped cream. Thanks for sharing!
