Chicken Scampi II

PERFECT!! This is Hubby's new favorite chicken dish. It comes out delicious every time, exactly as the recipe states. I do cut the chicken into smaller, bite-size pieces, and it cooks a little faster, but that is the only change I make.

Chicken and Mushroom Saute

This chicken is really fast and easy. I'm not usually a fan of the pan-fried taste or texture, but this recipe makes a FABULOUS mushroom gravy. Yum, and really easy!

Heavenly Halibut

I'm not the biggest fan of Halibut (a bit bland for my tastes) but the recipe itself is fabulous. HINT: I topped this dish with some French Fried Onion Rings (like the kind you use in Green Bean Casserole) right before putting it in the broiler the second time. Adds a nice flavor and crunch!

Almond-Crusted Halibut Crystal Symphony

This was SO delicious. Grocery store didn't have halibut so I substituted tilapia with no detrimental effects. I reduced the butter by almost half (used 6T instead of 10) and the sauce was still fantastic, nice and tangy. Do listen to others and doule the sauce. I just made two fillets for my husband and myself but made enough sauce for six. There was definitely some leftover but I am so glad I didn't go longing for more (very possible if I had made only 2 servings'-worth).

Ginger Glazed Mahi Mahi

This is absolutely amazing! I have never cooked fish before but it came out to die for. My husband loved it as well, though he asked me to reduce the balsamic vinegar because it was a tad strong for him.

Amazing Pork Tenderloin in the Slow Cooker

I read a lot of the reviews for this before I actually made it, and I decided to give the soy sauce a shot. I also added some Worcestershire. Let me tell you: leave the soy sauce out! It did smell a little funky. The pork was cooked perfectly, though. Very tender. And if it weren't for the soy sauce, the gravy would have been amazing.

Apple Filled Chicken in Pecan Creme Sauce

This was a tad sweet for my tastes, even after reducing the sugar to 2 TBS. I would advise reducing the vanilla instead, maybe by as much as half. Husband loved it, but he did mistake the pecan cream sauce for trash and washed out the bowl before we were able to put it on the chicken. Had to make more; luckily, it doesn't take too long.

This is absolutely delicious! One of my favorite meals from this website. I read some other reviews before I made it so I did alter the recipe to avoid the dryness factor. I doubled the garlic, added mushrooms and a can of Cream of Mushroom soup, and doubled the tomatoes as well. I also topped it with some grated Parmesan. Superb!

Super Easy Sloppy Joes

This was delicious! I actually used about half the meat and just made up the difference in extra veggies, and added some Worcestershire sauce to the mix. It tasted fantastic!

Risotto with Tomato, Corn and Basil

I love the basil flavor of this recipe! The only thing I might do differently next time is cook with chicken broth instead of milk. In my experience, it tends to thicken quicker and adds a little more flavor.

Sauteed Garlic Asparagus

I halved the recipe for my hubby and myself. When the spears weren't completely burnt, they were quite soggy. I would say reduce the cooking time no matter what, and reduce it DRASTICALLY if you're going to reduce the recipe.
