Christmas Breakfast Sausage Casserole

Reviewed: Dec. 25, 2001
I was disappointed in this recipe. It sounded so good, but we found it a bit bland. I think that I may try it again with a spicier sausage. It was very easy and convenient to prepare the night before.

Rich Cocoa Fudge

Reviewed: Dec. 24, 2001
As far as I'm concerned, this is the best fudge recipe. My mother always used this recipe when she made fudge for us kids. It's very rich and chocolaty, not like all those marshmallowy types. It can be a little tricky, but it's well worth the effort. Like my mother, I've always relied on the cold water test just in case the thermometer is off. The proper temperature is crucial to the success of this fudge.

Apricot Cream Cheese Thumbprints

Reviewed: Dec. 24, 2001
Delicious! I made these to add to gift tins because I thought they would be pretty. They were also very good. I used apricot and also red raspberry preserves for a different color and flavor. Both were nice. The cream cheese makes the cookie very moist and creamy and the lemon gives a little extra zip.

Four Spice Crackles

Reviewed: Dec. 23, 2001
Very good cookie. Very spicy and they stayed chewy and nice. I couldn't find coarse sugar, but then I decided to roll them in Christmas green and red sugar since it is coarse. They were very festive-looking and the coarse sugar adds a little crunchiness that regular sugar doesn't. Everyone in the family loved them, including my 2 1/2-year-old grandson. A new Christmas cookie addition to my recipe box.

Eggnog Thumbprints

Reviewed: Dec. 17, 2001
Great cookie! I made them to have for Christmas, but we've eaten them all, so I have to make more. Very easy recipe and the rum gives it a great flavor, but then I love rum! I think this will become a new Christmas cookie tradition for us.

Chicken Satay

Reviewed: Oct. 29, 2001
Loved this recipe except that it turned out too salty for us. I'll definitely make again, but cut the marinade time down to about an hour or so, instead of all day. Otherwise, it was great!

Cream Cheese Sugar Cookies

Reviewed: Oct. 28, 2001
Really good-tasting sugar cookie. I used this recipe to make Halloween cookies, and will use it again for my Christmas cookies. Next time, though, I think I'll roll the dough out a little thicker because they weren't quite as soft and chewy as I was hoping for, but still very good.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Sep. 12, 2001
These were excellent. They're very easy and quick to make, and they really do make the kitchen smell great while they're baking. We like soft, chewy cookies, and these are. I didn't have any butter-flavored shortening and used regular, but they are still great.

Bread Pudding II

Reviewed: Aug. 6, 2001
I have been looking for a good bread pudding recipe for years. This one is it. I LOVED it. I recommend, too, omitting 1 egg, and I added a little bit more cinnamon. It was delicious. After reading another review, I also made a brown sugar sauce to pour over it, and it was heavenly. Thank you for this recipe. I'll make it often.

Quesadillas II

We loved this recipe. The only difference I made was adding some sliced green pepper when I sauteed the onions. They were great. I should have made more. We ran out!

I really liked this recipe. Tasted as good as at my favorite Chinese take-out restaurant. The only difference I made was adding peas. Yummy!

Peanut Butter Cookies II

Reviewed: Jul. 28, 2001
Super recipe. The best peanut butter cookie I've made. I used chunky peanut butter and only had 1/2 cup of coconut. Also, I could only bake them 9 to 10 minutes. Any longer would have been too much at 375. They turned out perfect!

Kettle Corn

Reviewed: Jun. 28, 2001
I'm so glad I found this recipe. Now I don't have to wait to go to festivals to get kettle corn. I read the other reviews first and kept the heat down on medium, and shook the pan constantly. I also added a 1/4 cup more corn than called for since it seemed like a bit too much oil. It turned out perfect! We'll have this often.

Delicious and very easy to make. I used regular flour and smoked sausage and it is still very good. Great dish for Sunday mornings!
