Cannoli

I was a little dissapointed with the original recipe. As written, it's missing alot of essentials. For example, you MUST must must drain your ricotta. If you don't, after about 5 minutes it will be a soupy mess. Your ricotta may not look watery, but when it sits it melts. Also, I added orange zest to give it a bit more flavor. Don't go too crazy, just a bit (1/2 tsp) to kick it up. Another thing I did that was REALLY, REALLY helpful when I had that soupy mess was add heavy whipping cream (one pint). I whipped it with my hand mixer till it could stand on it's own (careful not to over mix...becomes lumpy) and then blended that into my cannoli filling. It made it very creamy and even now, a few days later, its still thick. I would recommend adding a bit of vanilla as well (1.5 tsp) but, only if your ricotta is drained well. I feel like that's the only thing my cannoli's were missing. I got really amazing shells at Wegmans for about .50 a piece. Alessi Shells...was in the pasta section in my Wegmans for some reason.

Strawberry Yogurt Pie I

This pie is great! I didn't layer the whipped cream on top of the frozen pie because I felt it would be better mixed in. I didn't have the freezer taste that others mentioned, but I also took the plastic inside from the pie crust and covered it with that. It worked out really well. It was like if you had froze a bunch of go-gurts and then put them in a grahm cracker crust. Soooo delish! :)

Baked Pear

My boyfriend and I enjoyed the pears, but I felt the recipe was lacking. The pears were still crunchy after an hour and the specified amount of honey and butter didn't give enough syrup to continue basting it through the cooking. The flavor was nice, but nothing too intense. The sauce that was left was REALLY good over ice cream and I'm going to try to make some kind of ginger, cinnamon syrup for ice cream in the future. I may make this again because it tasted pretty good, but only if I happen to have a few pears laying around. I wouldn't go out of my way to make this.

Bowties and Broccoli

The basic recipe is good, but it's not enough. You need to add plenty of other spices...garlic powder, italian seasoning, salt, and basil were my choices. I also thought that it would be really dull with just broccoli, pasta, and spices so I spiced it up a bit with hard salami chunks and pepperoni slices. It was a huge success at our family christmas party! I sauteed the garlic as prescribed and steamed the broccoli. Thanks for the great base recipe, I just like my pasta salad with a little kick!

Five-Veggie Stir-Fry

This stir fry was awful. Halfway through my bowl of rice and stir fry I started feeling nauseous. I even followed the hints found in the reviews of this recipe. My boyfriend and I ended up eating leftovers instead. Will never make again and am wary of any stir fry recipe.

Too Much Chocolate Cake

Used this cake recipe for a bridal shower cake I made. Rave reviews all around! I was really impressed with how level the cakes were (I made two nine-inch round cakes) and how moist it seemed. I would like to cut down on the cup of oil some how, but I haven't quite figured that out yet. Either way, its going in my recipe book! Thanks a bunch!

Stuffed Peppers

This recipe is very, very good, but... I think it lacks a bit of kick! I like very flavorful and depthy food and this just doesn't quite meet the mark. Don't get me wrong, I've made it at least twice since I found the recipe, but it's just missing something. Maybe some chilli powder and extra garlic? I'm not quite sure. Anyway, good recipe to start, but don't be afraid to try adding different flavors!

Angel Hair Pasta with Shrimp and Basil

My fiance loved this recipe, but I wasnt as impressed. It's much better than what I usually make for a scampi so that's why this gets four stars. The garlic that the recipe calls for is NOT enough for the entire dish. If your looking for a tomato-y garlic-y scampi, this isn't it as written. I would recommend adding at least another teaspon (if not more) as you reduce the tomato, wine, basil mixture. The taste is just about right otherwise and I did not have other reviewers problem with getting the sauce to stick, although I did NOT use the olive oil in the water. I really liked the chunky tomatoes and smooth, wine tasting sauce otherwise. My kitchen smelled very much like a good italian restaurant!! It would have been perfect with that extra garlic, otherwise. Thanks for the recipe!

Honey Garlic Ribs

OH MY GOSH! What a fun and easy recipe!!! Once you add the baking soda to the garlic and honey mixture it's like a volcano! I was so skeptical when I saw that, but I figured "Hey, I'm halfway-I might as well finish" and I'm so glad I did!!! This was the best ribs I've ever had! My hubby felt the same way! I think I may end up using this for Father's Day on Sunday. Thanks soooo much for this crazy, but yummy recipe!!! The only suggestion I have for those who said it has no flavor is increase the garlic by about a little less than a clove...helps bring out the tang of the mixture. Thanks again!

Slow Cooker Chili II

The measurements in this recipe were really off. I added almost 60oz of tomato puree just to get it to the point where it was more like chili and less like meat sauce. I didn't add any of the liquid that is in with the beans (I think it smells/tastes horrible) and found that it was the right (thick) consistency this way. I would definitely recommend sauteing your veggies in butter and garlic first.

Guacamole

Magnificent recipe!!! :) The blend of onion and garlic with the avacado flavor is so amazing! I made a packet guacamole one time before this... never again! It was a complete waste of an avacado! I'm adding this to my repetoire of recipes... love it! Thanks so much!

Oatmeal Raisin Cookies I

This recipe worked out fairly well. I used dark brown sugar as opposed to light brown sugar and it gives the appearance that the cookies are burnt. They taste great either way, but you'll see more dissapear if they aren't "burnt looking".

Super Easy Chicken Fingers

I was really pleased to find my chicken did not come out mushy! HOWEVER, I tried the honey mustard coating with the bread crumbs and not entirely thrilled with the taste. It may be the brand of croutons I crunched up and sprinkled on there. I would originally give this recipe a four, but in light of my modifications and the process was good in and of itself it gets a five. If I make this again, I may attempt my own croutons or stick with plain breading with the honey mustard coating. Overall, not a bad recipe at all!

Chocolate Peanut Butter Pie

FABULOUS RECIPE. I made the same changes that others did and this pie came out perfect! It definitely is a very heavy dessert, but so worth the calories! If you're looking for a "feel good" dessert or a sweet treat for a girl's night in this is definitely it. I'll be making this again and again for family and personal get togethor! :)Thanks so much!

Spinach Quiche

I'm not a big fan of eggs, but the garlic and cheese make this a total winner! I didn't have the Feta, but will definitely give that a try next time cause it would make this a six-star dish! Next time, I will bake the crust for a few minutes before putting the mixture inside - to keep the crust from getting soggy. Otherwise, FANTASTIC. Part of my recipe repetoire now!

I wish I could give this recipe more stars... it was a breeze to make, so easy to work with and I'm eagerly awaiting a finished product. I'm not concerned though! This is going to be my go to gingerbread recipe every year! It's very spicy, traditional gingerbread. The only thing that would have made this recipe better is a recommendation or recipe for decorators icing. Thanks so much!!!

Cranberry Pistachio Biscotti

I've never made Biscotti before, but I just wasn't impressed with these. They were soft on the inside and crisp on the outside, but I literally have chunks of biscotti because slicing them was a disaster! I put a dish towel over top as recommended to keep it from cracking and it still cracked even before I started cutting. I found that just pressing through it with a knife did NOT work. I had to saw through the crisp layer on the outside and then press my knife through the rest of it. I'm thrilled with the idea of making a biscotti, but this just didn't fit the bill. I'm going to tweek it a little bit in the future, but for now I'm just a little frustrated with mediocre results for all the work I put into them. Thanks anyway.

Definitely not enough Anise flavoring... I ended up adding the folowing : 2 additl tblspns of Anise 1 tblspn of Vanilla Extract 1 teaspon of Cinnammon and I still feel like something was missing. I did sift the flour with the baking powder and they got nice and crispy. I'll probably use this recipe again in the future, but I'm open to suggestions on additional ingredients to try. It was definitely missing something!

Layered Chicken and Black Bean Enchilada Casserole

I wasn't really impressed by this dish. I made it almost exactly to the specs (I added a little more cumin than called for) and just felt like it tasted like nothing but sour cream and black beans. My husband thoroughly enjoyed it, but it was just "meh" for me. I used Old El Paso enchilada sauce, so I thought that if anything would save it...but it was very blah. To kick it up a bit, I would recommend some serious flavor upgrades if you are considering making this...much more cumin and corinader, add some chili powder, and a little onion flavoring. I don't think this will be part of my regular rotation (unless DH requests it), but it was something new to try. Thanks anyway!

Paul's Pumpkin Bars

This is an awesome, awesome recipe. Even just taste testing the batter, I can easily say it beats any pumpkin pie or cake that I've ever had! (But, don't tell my aunts that) I made adjustments similar to many reviewers. 30oz can of Libby's Pumpkin Pie mix...I don't think it would have been as tasty otherwise. Cut down the sugar to 1.25 cups...I think brown sugar would have been really good here. Maybe .75 cups each. I added a little extra splash of vanilla because I didnt think it could go wrong and I added a teaspoon of pumpkin spice to the mix and sprinkled cinnammon on top before I baked them. I made mine in greased and floured 8x8 pans (they won't really be bars...more like slabs). DO NOT use a different icing. I used the Cream Cheese Frosting 2 on this site and was sadly dissapointed. Give the icing recipe on here a try, I wish I had!
