I'm a senior in college who recently got an apartment with her fiance' and am trying to save some money by cooking in instead of eating out. I'm also trying to eat healthier and balance my busy lifestlye...being a college student is NOT easy.
My favorite things to cook
Italian anything! And desserts. I've recently mastered banana bread and I'm really proud of that. My box brownies kick butt!!
My favorite family cooking traditions
We bake christmas cookies as a family...I can't wait to get my own mixer!
My cooking triumphs
Haha! As I've mentioned, the banana bread and I made a really yummy eggplant parmesean, but it wasn't really anything beyond the standard eggplant parm.
My cooking tragedies
...stir-fry....*shudder*.... it's sad, because I LOVE chinese food and stir-fries....I just can't do it!

Slow Cooker Chicken Taco Soup
Overall, this recipe is really quick and easy. I am not a big fan of the beer....if I could do it again, I would leave out the beer and amp up the spices. It came out a little bland....add in some red or green peppers, too. Hubby really liked it...I was just happy it was edible :)

Too Much Chocolate Cake
Used this cake recipe for a bridal shower cake I made. Rave reviews all around! I was really impressed with how level the cakes were (I made two nine-inch round cakes) and how moist it seemed. I would like to cut down on the cup of oil some how, but I haven't quite figured that out yet. Either way, its going in my recipe book! Thanks a bunch!

Spinach Quiche
I'm not a big fan of eggs, but the garlic and cheese make this a total winner! I didn't have the Feta, but will definitely give that a try next time cause it would make this a six-star dish! Next time, I will bake the crust for a few minutes before putting the mixture inside - to keep the crust from getting soggy. Otherwise, FANTASTIC. Part of my recipe repetoire now!
