Vegetarian Kale Soup
Great hearty soup! I used kidney beans, added a few carrots, some leftover rice, about a tbsp of lemon juice and used dried oregano, basil and parsley for the herbs. I topped each bowl with a drizzle of olive oil, some grated asiago cheese and some fresh ground pepper. Will definitely make again.

Easy Pesto
I made 48 servings worth of this recipe to have in the freezer for the year, but made it in 3 batches of 16 servings. I chopped the garlic and blended it with the almonds, added the oil (only 1 cup for the 16 servings), 1 tbsp of lemon juice, nutmeg and salt and pepper. After blending those I add the basil and mixed it with a spoon and then blend it while pouring about 1/3 cup of water into the blender. I froze the pesto into ice cube trays and silicone muffin cups. Will definitely make again.

Grandmother's Buttermilk Cornbread
Great cornbread. Used a bit less sugar, would probably use even less the next time, didn't have buttermilk so used soured milk and used whole wheat flour instead of all-purpose. Would make again.
