Goof Proof Coconut Curry Chicken

Well this would have been even better had I: used curry Sauce-not curry Paste-lord that was hot! oops! yams/sweet potatoes are a natural in this dish, and yes, definitely add sugar. i added white sugar. mmm it was good...... EDIT: Okay, made this again, just like the recipe listed. Added sugar, but not sweet potatoes. Found it alright this time, but kinda boring. Might not make again.

Tropical Mango Mousse

I can't eat dairy, so I used a package of soft Mori-Nu silken tofu, and blended it with a package of frozen mango and 2 bananas. Added a bit of cinnamon and it was done. Sweet enough and very good.

Banana Cake II

I used brown rice flour to make it gluten free. Didn't alter the measurements and it worked really well. Definitely will make again. I made one layer cake, and 12 cupcakes. Next time I'll play with adding cinnamon and nutmeg. Am about to make a goat cheese icing, which should be good. EDIT: I made this again, and it is such a good recipe. I used soy egg nog for the milk, and added nutmeg and cinnamon. Made a butter cream icing. This recipe is a keeper! My new favourite way to use old bananas!

Chicken Cordon Bleu II

My fellow wanted this for his birthday supper. My guests loved it and I thought it was pretty easy, though removing the toothpicks was a pain in the butt. I didn't use wine, and substituted soy milk for heavy cream, in an attempt to make this a little more compatible to my dairy-free, alcohol-free requirements. Kept a cheese-free piece of chicken specially marked for myself. I've had the real thing before I developed food allergies, and this alternative is not as decadent but is still really good. It's why I can't give it 5 stars, though.

The Best Lemon Bars

Have made these many times now, and they are super good. Making a pan of lime squares too, and presenting a checkerboard plate of lemon and lime squares looks great. Finish with a dusting of icing sugar, fresh mint and blackberries or raspberries. Fanciness! I make them gluten-free by substituting the flour with brown rice flour. It makes for a more delicate bar, but the flavour is great. This recipe is a keeper!

Lemon Pudding Cake I

This was disappointing, though edible. The cake was thin and had a funny texture,I think from the egg whites, and the pudding was thick and there wasn't much of it. I'll look for a new recipe for pudding cake.

Festive Prune Cake

this was delicious and light. too sweet for me though. next time i'll cut the sugar by 1/4 cup and see. i made this with gluten free flours, a straight 1:1 substitution and it's perfect. i boiled the prunes in prune juice, and then topped up what was left to make the 1 cup. nice recipe.

Lemon Yogurt Muffins

These are easy and good. Subbed GF flour 1:1. Came out a little tiny bit rubbery, and flat, so I guess I stirred just a bit too much. Was annoyed that I set the timer for 20 minutes and while I was out peeing the dog, they were over-browned...at 15 minutes!! And no, it wasn't my oven. They still taste good though, and I'll try them again.

Chicken Makhani (Indian Butter Chicken)

I did what I could with the ingredients I had on hand and it still turned out really well, so it must be a 5 star. I only had an organic tomato and basil pasta sauce, and cumin and curry powders - no garam masala- so I improvised. Just used butter, no oil. Cooked the chicken right in the sauce. It reduced and there was no need to thicken it. Don't use cornstarch! The cashews are a much better idea. The lemon was the kicker, though. Gotta have that. Nice to have such a tasty, forgiving recipe.

French Breakfast Muffins

well, it's not like this needs another review, but... i made the recipe as stated and: added generous amounts of ground ginger, cinnamon, nutmeg, and a pinch of cloves to the flour. (i subbed gluten-free flour 1:1) i added vanilla to the egg mixture. added chopped frozen mango and pecans to the flour before adding the egg mixture. they only took 14 minutes to bake. these are a keeper--lots of possibilities to play....

Cuban Beans and Rice

really great starting point. i used what i had on hand-- 2 chopped tomatoes and a splash of chili sauce, plus 1/3 jalapeno pepper. used long grain brown rice at a 1:2 ratio rice to chicken broth. also added some cubed butternut squash at same time as rice, and then some chopped boneless, skinless chicken thighs, 'cause I have to have my meat protein!.... this turned out medium spicy and tastes great.

Honey-Peanut Butter Cookies

these are tasty and simple. i used natural peanut butter, and my fellow didn't like them as much as if I had used a sweetened, 'processed' peanut butter, but too bad for him! i also used butter, not shortening. i was out of vanilla, (ack!) but i think they could use a shot of it, too. i liked them and will use the recipe again.

Pecan Pie Muffins

Sooooo good'n easy. Mini muffin perfection. Added some vanilla to egg mixture. Used gluten-free flour. I whipped these up in the morning before going to work, and they are definitely going to be a favourite.

Maraschino Mini Muffins

Very good, and cupcake-like. I used dark chocolate chips. I frosted them with a butter icing, using a little cherry juice for colour. Topped with a single dark chocolate chip. They look and taste great. I was generous adding the cherries and chips, so I ended up with 45 mini's.

Chocolate Macaroons I

I made these for Easter. I put them in 12 sprayed muffin cups, to create a basket shape by pressing out the middle with a teaspoon. Just before they were done, I took them out of the oven, pressed in the middle again, and put them back in for a few minutes. I cooled them in the freezer before I took them out of the pan. Each basket held 2 chocolate foil-wrapped eggs. For decoration I put a few marshmallow 'chickens' on the plate. They look pretty good, and I'm wondering how to use this trick for something other than Easter. The taste was 5 star, and I'll make these as little cookies any time.

French Beef Stew

This was alright. We ate it all, but be careful adding the mustard. Work up to the full amount, tasting as you go and don't add it all at once. As far as stews go it had simplicity of ingredients on its side, but I wouldn't consider making this for company.

Mini Orange Mince Pies

These were really lovely as is. I was generous with my orange zest and cinnamon. The next time I make these I want to try using ice cold orange juice instead of water, for extra flavour in the crust. I made them as a tart, with a heart-shaped crust top.

Mini Cheesecakes III

Easy to make. I have food allergies, so I used a GF graham crumb crust, and used goat chevre instead of regular cream cheese. This didn't work as well, I think. They were dry and crumbly, so next time I'll add more moistness somehow. The taste was alright, though, and I'm sure if I could have made it as posted, it would've been great. I'll give it 4 stars, but I think my attempt was only 3 stars.
