Speedy Homemade Salsa

Very good basic salsa. I added the juice of half a lime as well as the vinegar(and I only had balsamic but no big difference) and ooh la la, that was a good decision. It adds to the fresh taste. Chopped cilantro also kicks it up in freshness and taste. I only had serrano and habanero peppers in the fridge, so I used serrano. Another great flavour, and not any hotter than hot jalapenos.

Grilled Salmon with Habanero-Lime Butter

The habanero butter is so good, and like others say, worth making a batch and keeping on hand in the fridge. I've been using it to butter my husband's lunch bagels (with turkey and cheese) and he loves it and has asked me to make more. I read the recipe wrong and only had time to marinate the salmon for about an hour. This wasn't enough to transfer the flavour and heat into the filet. We were disappointed with how mild and boring it was, but I think that was my fault. The habanero butter rocks though.

Golden Yam Brownies

Based on other reviews I cut the sugars by half and indeed it was still sweet enough. Otherwise the first time I made these I followed the recipe as is and really enjoyed it. The second time I added cinnamon, ginger, raisins and walnuts. That was good too. Moves it into the 'carrot cake' realm.

Wazzu Tailgate Chili

I made this exactly as stated except I put it in the slow cooker to simmer for hours on low. We enjoyed it, it's a good recipe but I probably won't make it again. For a kickin' crazy hot delicious chili I'm gonna stick with the 5 star rated Hellfire Haberno Chili on this site. The flavours are more complex, and the chili is hotter. We liked it better overall. Next I'm going to try the 5 star rated Smokin' Scoville Turkey Chili and see how it compares. It would be nice to have 2 fantastic chili recipes to bounce back and forth with depending on the mood......

Cabbage Rolls II

The leaves on my cabbage were small so I layered this like a cabbage roll lasagna and baked it for an hour. It was very, very good. Definitely will make again.

Pumpkin Tart With Pecan Crust

Easy, light tasting, not too sweet, healthy, fast. I've made this twice now and have decided that it's my 'go to' pumpkin pie recipe from now on. No reason to make any other.

Caribbean-Spiced Pork Side Ribs

Great flavours. I added a wee bit of fresh chili pepper for a kick. I used this recipe as a slow cooker recipe. Boiled my ribs first then marinated them overnight in the sauce. In the morning put them on low for the day in the slow cooker. Fall off the bone goodness. Once the ribs are removed the sauce can be thickened with a little cornstarch and spooned over mashed potatoes or rice...

Frosted Pumpkin Bars

One TEASPOON of cinnamon?! Don't think so! Go wild on the spices, this cake can take it! I used a generous amount of cinnamon, (shake, shake, shake until you're happy) and ginger, cloves and nutmeg. These flavours all work with pumpkin, so why not. I also added raisins which were great in it. I'm allergic to eggs so I subbed about 1/4 cup applesauce, maybe a bit more. The cake was dense and moist, not light, but oh my gawd good. I also can't do cow dairy, so I used soft goat cheese - chevre - for the icing, and added a spoonful of orange juice concentrate to it, since I didn't have lemons in the fridge. It all worked brilliantly.I'll make this again. I wasn't thinking about calories...

Mini Pumpkin Butterscotch Muffins

I made this recipe gluten and egg free through substitutions, and it STILL worked well. I was generous with the spices, added some ground cloves and cardamom as well. Didn't have the chips so I chopped candied ginger and added walnuts and pecans. Very good combo with the pumpkin spices.

Korean BBQ Short Ribs (Gal-Bi)

Can't see how you can go wrong with this recipe. I put everything together in the crock pot and cooked it on low all day. I used pork baby back ribs, (I boiled them first), but this would work with chicken, beef, old socks, you name it. So good.

Mini Cheesecakes III

Easy to make. I have food allergies, so I used a GF graham crumb crust, and used goat chevre instead of regular cream cheese. This didn't work as well, I think. They were dry and crumbly, so next time I'll add more moistness somehow. The taste was alright, though, and I'm sure if I could have made it as posted, it would've been great. I'll give it 4 stars, but I think my attempt was only 3 stars.

These were really lovely as is. I was generous with my orange zest and cinnamon. The next time I make these I want to try using ice cold orange juice instead of water, for extra flavour in the crust. I made them as a tart, with a heart-shaped crust top.

French Beef Stew

This was alright. We ate it all, but be careful adding the mustard. Work up to the full amount, tasting as you go and don't add it all at once. As far as stews go it had simplicity of ingredients on its side, but I wouldn't consider making this for company.

Chocolate Macaroons I

I made these for Easter. I put them in 12 sprayed muffin cups, to create a basket shape by pressing out the middle with a teaspoon. Just before they were done, I took them out of the oven, pressed in the middle again, and put them back in for a few minutes. I cooled them in the freezer before I took them out of the pan. Each basket held 2 chocolate foil-wrapped eggs. For decoration I put a few marshmallow 'chickens' on the plate. They look pretty good, and I'm wondering how to use this trick for something other than Easter. The taste was 5 star, and I'll make these as little cookies any time.

Maraschino Mini Muffins

Very good, and cupcake-like. I used dark chocolate chips. I frosted them with a butter icing, using a little cherry juice for colour. Topped with a single dark chocolate chip. They look and taste great. I was generous adding the cherries and chips, so I ended up with 45 mini's.

Pecan Pie Muffins

Sooooo good'n easy. Mini muffin perfection. Added some vanilla to egg mixture. Used gluten-free flour. I whipped these up in the morning before going to work, and they are definitely going to be a favourite.
