About this Cook
I live in Northern Canada, and love cooking as a way of creating comfort during long winters and short daylight. I have food allergies and cook wheat-free and mostly dairy-free. I use Allrecipes a lot, and am comfortable making substitutions with alternative ingredients.
My favorite things to cook
Comfort food is my favourite. That usually means a meat protein and carb combination. Either a Thai curry with jasmine rice, say, or meatloaf and twice baked potatoes. I'm also a huge fan of making (and eating) dessert.
My favorite family cooking traditions
I have no favourite family cooking traditions. My mother cooked everything to please my father's palate, and that meant it was very well done. Doesn't matter what it was. There was no question as to whether it was cooked!
My cooking triumphs
Learning to become an expert cook in wheat- and dairy-free recipes.
My cooking tragedies
Not yet finding a satisfying macaroni and uncheese recipe.

Orange Loaf
Boring flavour. Needs more zip and zing. Thank goodness I added chocolate chips. Will keep looking for an orange loaf recipe.

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili
I used the recipe as inspiration for the ingredients I had on hand and it is super tasty. (My changes - generous amounts of mexican seasoning blend, and chili powder. A whooole lotta garlic, big fat cloves sliced up. Pinto beans with jalapenos. Fire roasted tomatoes with adobo seasoning. Chopped fresh pasilla pepper as well as the red pepper. Fresh chopped serrano peppers.) Will definitely do this again.

California Jalapeno Trout
I have served fresh mango salsa with other fish before - char, salmon - but this is the first time stuffing and baking. Turned out well. Saved some of the fresh salsa to serve on the side just in case. Good stuff. About 3 1/2 stars.
