Green Punch

This punch was good and green enough for our 4 year old's bday party but the additional sugar was definitely not neccessary. I didn't add any at all and it was plenty sweet!

Hudson's Baked Tilapia with Dill Sauce

This talapia was the best fish I have cooked in the oven. The lemon slices on top of the fish seemed to tenderize and hold the juices in the fish. I cooked it for 20 minutes and it was perfect. I used Old Bay seasoning, skipped the salt and pepper and put a little margarine on top of the fish before i topped with lemon slices. When I touched it with the fork, it just flaked open-perfection! Served with homemade pinto beans and cornbread and a mayo based slaw. My husband rated this one of my best dishes ever! For it to win out over beef is saying quite a lot.

Sesame Pasta Chicken Salad

Overall a pretty good recipe. I don't think I cared for the sesame seeds very much. I replaced the bowtie with whole wheat rotini. Next time, I'll chop the cilantro extremely fine as it was a bit leafy in the recipe. The flavor was very good, nutty and Asian. I'll make some changes and try it again soon.

Crispy Edamame

Great. I've never had edamame before and this was an excellent introduction. Only thing I would change is to buy the beans already shelled and to get a bigger bag! We went through them pretty fast.

Catfish Cakes

Excellent. I usually make salmon cakes and my husband liked these even better. I used Duke's light mayo (heaping tbsp) and used only 1/4 c. oil. You could probably even use less oil than that. I went with the 1.5 sleeves of Ritz and that was perfect. I cooked my fish in the oven as mentioned in an earlier review with old bay and olive oil. I later also added about 1 tbsp of old bay to my batter. Everyone raved about them. Went great with Parmesean Edammame!

Healthy Banana Cookies

wow. I cannot tell you how impressed I am with these cookies. My son has about 12 major food allergies, and this is something he can eat! I did add 2tsp.cinnamon and about half a tsp of pumpkin spice, and 1 tbsp of brown sugar. I don't think I'll add the sugar next time, they're sweet enough without it. I will be making this cookie around the clock. What a treat.
