Mrs. Sigg's Snickerdoodles
I followed this recipe exactly and they turned out perfectly! I live in an area of Dallas with a famous "chippery" that makes hands down the best cookies I've ever tasted, and someone asked me if I really made these or if I brought them in from J.D.'s!!! (It was a great compliment, believe me). Anyway, I would say that I didn't pull mine out right at 8 minutes because they weren't quite done, but by 10 they were perfect. It might be just my oven though.

Refreshing Limoncello Cake
This was a very good cake, very light and fluffy, and the perfect end to a meal! My whole family enjoyed it! I baked it in a bundt pan and it turned out BEAUTIFUL. The only comment I have is that it seemed that the limoncello liquer all settled toward the bottom of the cake after cooking, so the bottom half seemed much more "alcohol-y" (according to my sister). And I wish it had been a little bit more tart. Next time I'll add a little bit more lemon juice/zest. But not too much!

Carrot Cake III
This carrot cake was AMAZING! I made it with a few modifications at the suggestion of other reviewers (I used 3/4 c. oil and 1/2 c. chunky applesauce; 1c. brown sugar and 1 c. white sugar, added extra vanilla, nutmeg, and cinnamon; and added a can of crushed pineapple to keep it moist) and folded 3/4 c. raisins into the mixture. I also used neufchatel cheese instead of cream cheese for the frosting to cut a few of the calories (not many :)). It was PHENOMENAL. Everyone who tried it loved it (even my picky friend who hates carrot cake admitted it wasn't bad), and several people told me it was the best carrot cake they had ever had. DEFINITELY going to make this one again!
