Pork Chops Stuffed with Smoked Gouda and Bacon

Used pork tenderloin because I prefer the cut. Husband made it for my birthday and it was simply AMAZING. Truly, give this a try. Every taste was so flavorful. Definately grill it. SO SO yummy!!! This is going in the SAVE box!!! (I made sandwiches the next day with the leftovers ~~what we didnt devour~~.)

Barbecued Shrimp

The only thing I changed with this recipe is I shelled and deveined the shrimp and grilled them on the BBQ. SO tasty. This recipe is a keeper, for sure.

Spinach Quiche

This is soooo yummy. I used fat free half and half instead of milk, fresh spinach and fresh mushrooms, Monterey Jack (i dont like melted Cheddar) crumbled bacon and sliced tomatoes on top. My husband wouldnt let me freeze the extra quiche that I made.

Chantal's New York Cheesecake

This is really good...mine cracked a little, despite a water bath, but who cares. It was my first. I dont think it's a true NY cheesecake, but it's yummy. For my sauce I made this: 1/4 cup sugar (heated in a pan), a cup of pureed raspberries and a cup of pureed strawberries. Strain both and add to the sugar. Put in almost a whole bottle of a mini bottle (airplane bottle) of Amaretto, drink whats left of the amaretto, and juice of half a lemon. Heat just under a boil then refridgerate. A perfect berry sauce.

Camp Cornbread

Loved this cornbread...it was so moist from the creamed corn. I left out the sugar because I hate sweet cornbread. this is my new cornbread recipe.

Roast Sticky Chicken-Rotisserie Style

WOW. This was fantastic. As one other reviewer said: this really is better than store bought cooked chickens. I let it marinate overnight and cooked it like directed and it was so moist, I was surprised for an oven cooked chicken. This is going in my top ten recipes.

Broccoli Corn Bread

YUM...this recipe is pure comfort food. It does not have a strong flavor...next time I may add grated parmasan. FYI: I didnt dice my onions well enough, so run them through a food processor.

Garlic-Shrimp Angel Hair

I kept the basic sauce for this recipe, but I added more veggies (mushrooms, baby peas and shallots) and I also devided the shrimp with lobster tails. The basic sauce is very good and hubby cleaned his plate. (also used penne instead of angel hair, only because I like the shape better). Will definately make again...already in the recipe box!

These were pretty good. I'll eat them again, but they didn't really do a whole lot for me. I like to make food that is good enough to serve in a restaurant, and this didn't do it. Husband hasn't asked for them again.

Anaheim Fish Tacos

I've made this a few times, with whatever white flaky fish I find at the fish market. This has a ton of flavor, but I think fish that has been frozen too long might be a tad fishy tasting. It does finish with a lot of extra sauce, so you might prefer to strain it some. FRESH cilantro is key. I also used both corn and flour tortilla's and the flour ones held up better, even though I prefer the taste of corn tortilla's. I made it for my husbands boss and he didn't say a word during dinner, then went and got seconds. All of the seconds. This smells soooo good when cooking. YUM.

Cucumber Sunomono

I hate to rate recipes and change them. That being said, i hate ginger, so that was left out and i love soy sauce, so i included a dash...just enough to make the sauce an amber color. LOVE this dish. Perfect when I cant get to a sushi restaurant. Very tasty.

Sesame Seared Tuna

YUM. I got some Ahi tuna, never frozen, from an Oriental market, as well as all the other ingredients.I marinated the tuna for about an hour then used toasted sesame seeds. I cooked it in an already hot skillet (not smoking hot, the seeds will burn) for about 3 minutes on each side, sliced it up and served it rare with sauteed spinach, garlic and leeks. And sake. It's impressive enough for company and plates beautifully. Gotta use ahi grade tuna for this one.

Garlic-Lime Pork Chops

I made this with pork chops first, and loved the marinade, then with chicken the next time and liked it better. Really tasty. My husband specifically asked for this marinade for dinner. SO easy to make.

Roasted Brussels Sprouts

I make these at least once a week. I love them, even cold the next day they are great. Works best if you chop off the bottoms and half them. Only cook for 30-35 minutes, turn off the heat, then leave them in the oven for 10 more minutes, keeping an eye on them. My husband eats them off the stove before I can get them on the plate. YUM.
