Flavorful Beef Stir-Fry

This is a wonderful stir-fry recipe that lives up to its name. The dish remained moist, and was delicious served over brown rice. My husband had thirds (very unusual)! The only variation I made, at his request, was to add mushrooms. You must try this recipe!

Peanut Beef Stir-Fry

I gave this 5 stars becuse it not only tasted fabulous; it was extremely quick and easy to boot. Great for even a mid-week workday dinner. My husband - a strictly meant and potatoes guy- loved it!

Chocolate Zucchini Cake I

What a great recipe when there's an overabundance of zucchini in the garden! Like one other reviewer, I sprinkled chocolate chips and chopped walnuts on top of the cake before baking. My family loved the cake once they got past the idea of having zucchini for dessert --- the cake freezes well, so though it makes a large cake you can cut it into smaller servings and enjoy later. Loved it!!

This is a nice banana bread recipe. I have substituted sour cream for the buttermilk, with good results. I always add nuts, too!

Maple Banana Bread

This banana bread recipe is a nice change from the norm. Here in Vermont, we love maple in/on everything, so we particularly like the maple twist. I don't keep maple extract in the house, so I skipped that ingredient. Like one other reviewer, I added a tsp of vanilla and cut back on the baking soda. I have added nuts for texture, but it's good without also.

Garden Chicken Stir Fry

I loved this recipe, and so did my entire family; it's a crowd-pleaser that is easy to make! Slight variations: I don't like mushrooms, and I rarely keep pecans in the house, so I left those ingredients out. I had read that the recipe was a little bland, so I make sure to add salt, pepper, garlic and a couple of tablespoons of McCormack Salad Supreme Seasoning. Enjoy!
