Best Baked Chicken

I really like this recipe. The only thing I changed was the garlic powder instead of salt and low sodium soy. I didn't think it was too salty at all.

I thought these turned out great. This was my first time making fried okra and it was a little time consuming, but they were great! I did mix a little flour with the corn meal and I fried them in peanut oil. I will definitely make them again.

Chicken Stir-Fry

I made this almost as written and thought it was very good. I did add some red bell pepper and garlic. I should've read the recipe better before I started, because the "Ready in..." time at the top doesn't include the 30 minutes it sits in the fridge, so dinner was a little later than expected. The cornstarch thing was new for me and I thought it turned out beautifully and tasted great! Served with rice.

Chicken Florentine Casserole

This actually turned out better that I was expecting it to. I sauteed spinach and mushrooms with some garlic, little butter and olive oil. I put that on the bottom of the casserole dish with raw chicken on top. I made the sauce almost as written and poured it on top. I used milk instead of half&half and I added about 2 tbsp of chive flavored cream cheese. After baking 30min, I added my own bacon and the cheese for another 10min. It was so yummy!!

Cajun Chicken Pasta

I made this recipe last night for my boyfriend and his brother. I was very impressed. It was very easy. The only thing I did different was add a little cornstarch to thicken it up. It was just spicy enough!

Calico Squash Casserole

I rated this 5 stars because I think it is an awesome recipe, but also because my friend's dad thought it was really good too (he is the head of the culinary dept at a college here)! I've made it two years in row for Thanksgiving and I didn't change a thing...VERY GOOD!

Double Layer Pumpkin Cheesecake
