Toll House® White Chip Chocolate Cookies

Excellent texture, cookies didn't flatten. I've never made cookies without shortening that hold their shape so well as these.

Overnight Apple Cinnamon French Toast

Summary: a very good special occasion breakfast but makes too much for one pan. I brought this to a breakfast casserole potluck and it was super popular, many people asked for the recipe. It was nice to have the variation with so many egg casseroles brought. I reduced both the bread and pie filling but my pan still overflowed all over my oven. Next time I will use one can of pie filling. With the bread, I will cover the pan once with slices, spread some egg, cover the pan with another layer of bread, then egg and then be done. This should take less than one loaf of bread, I think. Oh, also, I left out the milk entirely and will probably do that again. And I will put a jelly roll pan on a lower rack in the oven, just in case it spills over again.

Apple Coffee Cake Pizza

Raspberry Lemonade Pie

A great dessert for a hot day when you don't want to bake. I made my own crust and it worked well to make a double graham cracker crust recipe and put it in 2 8 x 8 pans. I'm interested in trying variations--choc cookie crust, other kinds of jello, etc.

DASH Diet Mexican Bake

A good basic recipe. I had various leftovers in the fridge and was trying to decide if I should mix or layer them and this recipe helped me decide to layer. I poured a little chicken broth over the rice. I used some diced tomatoes and some tomato sauce--I would say, just use tomato sauce. My two year old especially liked the casserole.

Crusty Potato Bread

I've made this recipe at least 5 times. It always has good texture and flavor. I use dry active yeast so I increase the amount a little. I also always check the bread machine 5 minutes in and sometimes need to adjust by adding a little flour. It is always a good bread for serving alongside dinner. Some loaves sliced perfectly for sandwiches; other times I could only get thick slices. Try it!

Pumpkin Chocolate Chip Cookies III

A great moist cookie. Perfect right out of the fridge, with milk. I tried several different sizes and decided that I like the rounded half tablespoon size best. One 15 oz can of pumpkin is about 1 3/4 cups and I have a hard time using up extra pumpkin so I doubled the recipe and used 1/4 cup banana to make up the difference. Also, I drastically reduced the chocolate chips. I think substituting mini chocolate chips might improve the cookie a bit.

Breakfast Casserole III

I made this recipe for a "breakfast for dinner" night with friends. I added bell peppers and extra seasonings and baked it in two pie plates. I also made it a few hours ahead and kept it in the fridge until it was time to bake, just before dinner, so the baking took a little longer. It turned out great!
