Eggplant Parmesan

This recipe was pretty good. I've never had eggplant before so I thought I'd give it a try. I was one of those annoying people who changed it up the first time. I added oregano and crushed red pepper to the basil for a little more flavor. It was pleasant enough to make again.

Turkey Curry

This was really good! The only reason it didn't get 5 stars is because 1 tsp of curry powder is not nearly enough. I used well over 2 tsp and 1 tsp of cayenne pepper. I also did not have enough liquid and ended up adding more milk for a good broth. This is a really good use of leftover Thanksgiving turkey. Really, how many turkey sandwiches can one person eat? This is definitely a make again.

Popcorn Candy Balls

We made these popcorn balls as an activity in the group home I work in. After following other suggestions of using less mashmallow (we used half a bag), chewy caramel bites and 3 bags of microwave popcorn we decided these were a hit. Such a hit in fact that I'm making them for nieces and nephews for Halloween!

Matty's Brie Cheese Fondue

I served this for Valentines Day for my husband. We both loved it. I did end up being a little on the salty side. Neither of us seemed to mind it as it wasn't overpoweringly salty. (I should have tasted it before adding additional salt) I don't keep wine or sherry on hand but I did have white cooking wine and cooking sherry so there wasn't an alcohol taste like some of the other reviewers found. Since there was only two of us eating I cut the recipe in half, except for the garlic, I still crushed up 2 cloves and it was perfect. I served this with beer bread, cooked chicken (seasoned with salt and pepper) apples and veggies. We both loved it!

Chocolate Bar Fondue

Yummy! I made this for a SuperBowl Party! It was quick and easy and delicious. With it I served, pretzels, marshmallows, bananas, angelfood cake and vanilla wafers. I didn't use 32 oz of grated chocolate and used 2 bags of Hersheys Milk Chocolate Chips. I'm also not a fan of coffee and chocolate together so I skipped that. Per other reviewers I also omitted the sugar and water and ended up with the perfect consistency. I will definitely make this again, only next time I may try it with the Baileys Irish Cream or almond extract!

Southwestern Vegetarian Pasta

This recipe had an incredible taste. Some of the directions seemed unclear. Was I supposed to drain the chickpeas or use the liquid. I drained them and found there wasn't enough liquid so I ended up adding water to it. I mixed up some homemade biscuits to go with the pasta dish. Hubby asked me to make this again and I will happily comply!

Louisiana Sweet Potato Pancakes

This was ok. Even after spicing up the recipe quite a bit it was still just ok. I didn't mash the sweet potatoes up enough (my error not the recipe). Hubby loved them especially the ones I added pecans to. I'm a tough rater so for me to give it a four is pretty decent. A five is only for recipes that I deem incredible! They were tasty enough. I'll probably try them again when I have cinnamon.

Tomato, Cucumber and Red Onion Salad with Mint

This is a nice refreshing summer salad and a pleasant way to use fresh garden produce. I didn't have red onion so I used one from the garden. This didn't score a 5 in my book because it wasn't totally outstanding. Just nice and pleasant.

Yogurt Almond Ice Cream

This frozen yogurt was so good. Instead of using vanilla soy milk I used half and half and added a dash of vanilla. I also added some almond extract, marachino cherry juice. Instead of serving the almonds on the side I made them sugared almonds and added them into the mixture along with some cherries. I loved it! I will be making this again!

Sue's Hot Fudge Sauce

As Rachel Ray would say "Yum-mo" I followed a few of hte suggestions and cut the butter down to 2/3 cup and mixed it with some margarine (due to lack of butter) I boiled it for 10 minutes and added 1 c. of chocolate chips after boiling. My measuring spoons were MIA so I just dumped in some vanilla. Delicous! Can't wait to try it over brownies and ice cream.

Tabbouleh II

This was an incredibly easy and delicious recipe. I couldn't find bulgur in either of my local grocery stores so I used couscous instead. I'm looking forward to it tomorrow for lunch in a pita pocket with some fresh from the garden veggies. I definitely will be making this again!

Key Lime Pie VIII

Hubby had been begging for Key Lime Pie ever since I bought Key Lime Juice by mistake. I decided to try this recipe and he said it was incredible! I only made one change and that was to use a graham cracker crust. I even tried it and thought it was very refreshing and I don't care for the taste of limes. It wasn't too tart or tangy. I had extra filling so I put it on graham crackers and froze them for a frozen treat. Those were really great also! Definitely a make again recipe
