Maria's Broccoli Rabe

I was delighted to see broccoli rabe in my first CSA box this afternoon. It's been a few years since I cooked it myself. I chose this recipe to use because I vaguely remembered boiling my rabe and then sauteing the last time I made it. Some of my stems were still really hard, but the stuff that cooked right was WONDERFUL. The stems were probably woody due to the lateness of the season, not the recipe. In the future I'll cook rabe when it's still chilly out and check the stems out before I boil.

Roasted Beets with Feta

I enjoyed this recipe. I wanted more of a traditional salad feel, so I served this tossed with baby greens. The salad dressing was very good. My husband is usually the dressing maker, so I was relieved that it needed no doctoring. I used the green onions from our waning garden, but I'm sure shallots would have been great. I roasted the beets with some chopped garlic on top as I saw suggested in another similar recipe. YUM!

Home Made Mayonnaise

Mine was kinda runny. I added the oil super slow as I read to do in other mayo recipes... I dunno. It was probably user error. I don't like mayo but I need it for recipes sometimes. It's a very useful recipe for someone who doesn't normally have it in the fridge.

Rose Petal Pistachio Ice Cream

Be VERY careful with the rosewater or it'll taste too perfumy. If you mess it up and add too much like I did, just go buy some vanilla ice cream and mix it in.

Peppermint Ice Cream

I made this with crushed altoids and dark chocolate because I forgot to grab the specified candies at the store. Usually I'd go back, but not on xmas eve, it was crowded at the supermarket! Peppermint is not my favorite, but it got good reviews from friends and family. A good seasonal treat to share with loved ones.

Avocado Quinoa Salad

I'm not sure that this is the best quinoa recipe, but it is worth trying. It's nice and light for a hot summer day. I added cilantro as mentioned by other reviewers. I think I'll try it again with black beans, replace the lemon with a lime and omit the celery, it didn't add anything for me.

Chocolate Velvet Ice Cream

I received a kitchenaid stand mixer with a kitchenaid ice cream attachment at my bridal shower last week. I was eager to try out an ice cream recipe and I settled on this one. I only had 2 cups of cream so I subbed whole milk for the extra 2/3 cup the recipe called for. I did a mix of chopped up semisweet chocolate chips and nuts (instead of just chocolate chips) that I put in the ice cream maker during the last 2 minutes of mixing. It was pretty good straight out of the ice cream maker, but it was exceptional after freezing over night. Very creamy and delicious, but not overly heavy at the same time. Everybody should try this! It's so easy that even a 1st timer can do it. Thanks for sharing!

Aioli (Garlic Mayonnaise)

I think I made it right, I drizzled the olive oil in SLOWLY while I furiously whisked, but I didn't like the end result. I don't really like mayo, so go figure. I thought it would taste different fresh, but I still don't care for it. I'm sure mayo lovers would like this simple little dipping sauce, but I do not!

Bourbon-Mango Pulled Pork

I Loved it! I just used a little sample bottle or bourbon. I didn't taste it at all and I didn't miss it. I recommend this, it's juicy, sweet, and spicy. I used a hearty toasted wheat bun and it stood up well to the rather messy filling. *edit: I've made this numerous times and the only time it wasn't great was when I slacked on getting the pork into the slow cooker and was forced to cook it on high. It was too dry and not worth the mess and bother. Definitely get your butt in gear and start it early or rethink your dinner menu!
