About this Cook
I love food, and I'm very particular. I spend a lot of time researching, trying to find a perfect recipe to try.
My favorite things to cook
Thai, Italian, and South American foods are fun to cook. I love vegetables and comfort foods, but I make desserts to impress others. I have a vegetable/fruit/herb garden for the first time this year so I'm getting more into seasonal cooking.
My favorite family cooking traditions
My YiaYia's Greek food is the bomb.
My cooking triumphs
Pumpkin Tofu Curry.
My cooking tragedies
Baked Chiles Relleno... or as I call it "weird cheesy pepper souffle disaster"

Strawberry Shortcake with Cheesecake Whipped Cream
This is a highly variable recipe. Our local grocery makes their angel food cake cloyingly sweet, so please add more sugar to the whipped cream cheese or strawberries if it needs more sweetness. I also don't go too crazy with mashing the strawberries because this is a dish I make for picnics and I don't want it getting all soggy while it sits. I would definitely pulverize a good portion of the strawberries if I was digging in immediately. I'm glad people are enjoying my concoction.

Maria's Broccoli Rabe
I was delighted to see broccoli rabe in my first CSA box this afternoon. It's been a few years since I cooked it myself. I chose this recipe to use because I vaguely remembered boiling my rabe and then sauteing the last time I made it. Some of my stems were still really hard, but the stuff that cooked right was WONDERFUL. The stems were probably woody due to the lateness of the season, not the recipe. In the future I'll cook rabe when it's still chilly out and check the stems out before I boil.

Roasted Beets with Feta
I enjoyed this recipe. I wanted more of a traditional salad feel, so I served this tossed with baby greens. The salad dressing was very good. My husband is usually the dressing maker, so I was relieved that it needed no doctoring. I used the green onions from our waning garden, but I'm sure shallots would have been great. I roasted the beets with some chopped garlic on top as I saw suggested in another similar recipe. YUM!
