Buttercream Icing

Great recipe! I used 3 cups of icing sugar, 2 tbsps of water and all butter. Came out perfectly. Used to to pipe cupcakes and it worked out perfectly!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Wow, delicious! Used 1 cup whole wheat and 1 cup regular flour and reduced sugar to 1/2 cup as they were for my 1 and 3 year olds. Used fresh strawberries that I had frozen and they were so sweet! Will definately make again!

Tender Barbecued Chicken

I thought this was really good but next time I'll leave out the lemons, I didn't like the citrusy tang it gave them. After 7 hours I shredded it and left it for another hour. We made sandwiches for a picnic with it.

Playgroup Granola Bars

Great recipe, a huge hit with my 2.5 year old. I do reduce the brown sugar to no more than 1/2 cup, often less. We throw in anything and everything that is on hand - dried blueberries, cranberries, coconut etc. I make a pan, keep 4 or so out then freeze the rest in ziplock baggies of 3 or 4 each so they always are fresh.

Date Flecked Orange Muffins

I used between 1/4 cup and 1/2 cup of sugar and cut the ginger and cloves down to 1/2 tsp but wow, these were awesome! Good "helping" recipe for my 2.5 year old too, he loved chucking all the things in the blender. He gave them 2 thumbs up after trying one as well. I'm not a huge date fan so I wasn't sure if I'd like them but the dates get ground up so small that you barely even notice them - delicious! Will definately make again.

Apple Carrot Muffins

These muffins are great and my toddler loves them! I cut the sugar to 1/2 cup and used All Bran cereal then threw in some raisins. Delicious and a great way to sneak some veggies in!

Homemade Pancake Mix

Thought this recipe was great! I made the banana/blueberry version and my picky 2 year old ate THREE! Quick and easy. Looking forward to making them again - and the picky 2 year old will be getting the leftovers in his lunch tomorrow!

Cheddar Beef Enchiladas

Really enjoyed these. Forget freezing one pan, I made both and we are all taking it for lunch tomorrow. My 18 month old scarfed these down as well (made them with mild salsa). Added some black beans as well and the flavor was great. Will definately make again!

Sugar-Dusted Blueberry Muffins

I really liked this recipe - I make them as mini muffins (cook for the same amount of time) for my toddler. It's hard to find low sugar muffin recipes. I've made them twice - the first time as blueberry and tonight as cranberry, both turned out great! I freeze them in ziplock baggies and defrost when needed.

Apple Fruit Bread

This recipe is obviously missing a liquid ingredient - the amount of apple juice and the 1 egg aren't enough to moisten the rest of the ingredients. I didn't realize this until I did it then had to add some milk. Very heavy bread, wouldn't make again.

Just the recipe I've been looking for! I've tried a bunch and something was always a little off - this one rocks! I didn't bother doing the sprinkling with cheese near the end, just put it all on and just took off the tinfoil for the last 15 minutes.

Blueberry Crumb Muffins

Spring Strawberry Spinach Salad

Love this salad! As strawberries aren't in season right now, I used manadrin orange segments instead. I would definately use less oil next time (I used 3/4 c. but I think I would use 1/2 c.). I think it makes too much dressing actually, so next time I won't just dump it on but put a little in, mix it, repeat. Might add some toasted almond slivers next time as well. Excellent recipe, made it for the in-laws who loved it and am planning to make it for lunch for tomorrow as well as for a potluck in a few weeks!

Delicious!! A cafe by my work sells ones like this and I was looking for a recipe to make them myself. I rolled them in sugar before cooking but also sprinkled them with it after taking them out of the oven to make them look nice. A huge hit.

Caramel Filled Chocolate Cookies

These were wonderful! A quick hint-try using those "Hersheys Bites" candy for inside. I used the York peppermint bites but I know they come in Skor and Almond as well. Didn't use the nuts but did crushed almonds on top. Make sure to wrap the dough tightly around the candy, if it's too loose, it can look a bit concaved.

Best Big, Fat, Chewy Chocolate Chip Cookie

I have been trying for years to find the perfect chocolate chip cookie recipe as my boyfriend is extremely picky when it comes to his cookies. Some are too sweet, some are too flat-you get the idea. After I made this recipe, he said that he only ever wants this kind of chocolate chip cookie ever again! After years of hunting, finally the perfect cookie! Thanks, Elizabeth! *****I originally reviewed this about 4 years ago or so and have to say, STILL the best! These are the only cookies my husband has wanted since I first made them. A quick tip - make a double batch and freeze the second - just roll into logs, wrap with wax paper then saran wrap. When you want to make them, microwave the dough (not for long) until it's just soft enough, roll into balls and bake. So easy!*****
