Mexican Lasagna Rollups

I used ground turkey for this recipe (I always sub ground turkey for ground beef). I seasoned my ground turkey with onion & garlic powder and oregano, then I added the taco mixture when it was done browning. I used low sodium taco seasoning, as this recipe seems awefully high in sodium. I couldn't bring myself to throw a glop of the salsa con queso on top of the already dry looking lasagna noodles, so I diluted the queso with some milk, covering the entire noodle. I ended up using only about half the jar. In retrospect, I think heating the queso may have done the trick also. I will be making this again, but I will try adding fresh cilantro to the meat mixture next time and maybe some sliced green onions on top to garnish. I served it with sour cream on top and salad. Very good!

Italian Sausage Soup with Tortellini

THE BEST SOUP EVER!!! If you ever want to impress someone coming over for lunch/dinner (who understands that soup is a meal) this is the perfect recipe. We sprinkled parmesan on top & had it with rosemary & olive oil artisan bread from our local grocery store with EVOO & seasonings to dip the bread in & we could not get enough. Very filling too.

Texas Cowboy Stew

This is a meal everyone will love! First I cut the servings in half, then I used ground turkey instead of hamburger, light red kidney beans instead of black eyed peas, & canned potatoes so i wouldnt have to do all the work! It was still great. Also, i was out of chili pepper so i used a teaspoon of chili seasoning instead & it worked just fine. I think next time I'm up for the work I will use real potatoes & leave the skin on! This recipe is a must try!

Zucchini Herb Casserole

This was sooooo good! I used brown rice instead of white and I used a chunky tomato sauce because i didnt have any tomatoes. The tomato sauce was enough to not have to add the extra seasonings as others did. I substituted EVOO for the vegetable oil & i sliced my zucchini very thin & then quartered it. I just eyeballed the cheese because we're on diets. I didnt want to dirty another dish so I just added the cheese right on top of the skillet, covered it & let the cheese melt! This side dish is pretty filling and would be a great vegetarian main dish. I will be adding this to my regular rotation for sure!

Classic Rice Pilaf

BEST. RICE . EVER! All the steps in making this are absolutely worth it. I have a family of four and EVERYONE (kids included) wanted seconds! I'm so glad I didn't decide to scale back the recipe because they also requested the leftovers the very next day! I chopped the onions very small because my kids are the kind that will pick them out, but no one even knew they were in the rice! They just "melted"! I only put a dash of cayenne, because of my littles, and it was just perfect. It gave it an extra "something". I don't usually buy saffron, but I'm sure that would only kick it up another notch - as if that's possible?! Definitely a dish you can make for company and the rice/water ratio was perfect. Just seal your foil around the dish well and NO PEEKING until after it rests for the entire 10 minutes. You will find steamy, fluffy, individual grains of rice that you just need to fluff with a fork and serve.

Smothered Green Beans

This was delicious! Similar to green beans I've had at southern restaurants. I did cut the bacon to 4 slices because I just couldn't bring myself to use 6 and there was still enough bacon for every serving to have some in it. Next time I will use 3, just being health conscious. I used a bag of frozen petite string beans. My kids don't like veggies and ate these without complaining!

Spinach Tomato Tortellini

Pretty good for a quick weekday meal. My diced tomatoes didn't have the garlic and onion, so I sautéed them in olive oil before adding the tomatoes. Next time I'll try it with the right tomatoes to see if I can save a step. I used regular milk and 1 tablespoon of cornstarch to thicken. The kids liked it and it was an easy way to sneak in some veggies.

Carol's Chicken Salad

This was enjoyed by everyone in the family, even my picky eater! We don't like much crunch in our chicken salad, so left out celery, green onions, water chestnuts. I used celery salt and onion powder instead. Didn't have Swiss cheese or lemon juice & was still yummy! Used red grapes instead of green. Would add the lemon juice & maybe try the Swiss cheese next time. May also add walnuts next time as well.

Restaurant-Style Potato Salad

This recipe is great because you can make it to suit your/your families' tastes. Did not add onions, celery, pimento or carrots so the kids would like it. (In my opinion the carrots just give it color anyway) Was out of eggs, but would definitely add next time. I would have added celery seed instead of celery, but forgot; would add next time. And I would double or come close to doubling the relish next time. Oh, and I just used plain white vinegar instead of the white wine vinegar and it was not overpowering at all. I used olive oil mayo, which probably makes little difference. I had to add another 2 min to the cooking time of the potatoes even after I had cut them down to be equal size. I used Yukon gold potatoes and left some of the skin on. And I used the "make the dressing first" technique that other reviewers suggested, and then tossed the potatoes in. I served it with turkey burgers and corn on the cob for dinner and I'm ashamed to say I went back twice later that night for my "snack"!
