Nigerian Peanut Soup

WOW. this recipe looked very interesting, but I am on a tight budget so I had to improvise everything but the bell pepper! I started with dried onion flakes and reconstituded them in the juice from a can of cooked chicken breast meat. then I added 1/4 tsp. cayenne pepper and 1 chopped green bell pepper. I sauteed until tender. Then I added 1 can cream of chicken soup with 1 can of water, the meat from the canned chicken and a sprinkle of garlic salt. I then lowered the temp and added 1 cup of peanut butter and 2 Tbsp. of brown sugar. I didn't think it was spicy enough so I added more cayenne. It was thick and creamy, salty, spicy, and rich with flavor. Absolutely delicious. I served over brown rice. I hope my husband likes it, because I will make it again and again!

Blue Cheese Burgers

These were amazing! I added a little garlic and some BBQ spices in place of the hot sauce. I also topped them with bacon, avacado, and a sauce I made of 2 parts pre-made french onion dip and 1 part mayo with fresh minced garlic. Like someone else wrote, the flavor is a little strong for kids, but the adults liked them a lot!

Pumpkin Chocolate Chip Muffins

These were really good. The pumpkin and chocolate mix was actually quite interesting. My brother is allergic to wheat, so I used gluten-free all purpose baking flour. I also used brown sugar, and lots of vanilla. I topped them with "Whipped Cream Cream Cheese Frosting" and chopped walnuts! Yum Yum

Whipped Cream Cream Cheese Frosting

Absolutely delightful! Definately chill mixing bowl and beaters for whipped cream portion! I used half splenda and half powdered sugar for a low-cal version. My mom enjoyed the frosting a little too much and licked the bowl clean!
