Party Punch III

This is definitely a keeper--I recently used this great non-alcoholic recipe at a business event, served in a beverage fountain. It was the hit of the party--refreshing and not too sweet, and sooooo simple to put together. I floated frozen plastic "ice cubes" in the bowl (the type filled with a substance that retains the cold) so the punch wouldn't be diluted. I will definitely serve this again and again.

Italian Bread Using a Bread Machine

I'm one of those cooks that can cook almost anything with good results, but somehow making any type of dough continually challenges me. This recipe turned out fantastic, as is. I had no problems with the consistency of the dough--it was perfect when the dough cycle on my bread machine was finished. I used it to make stromboli, with excellent results. Will use this recipe again and again!

Cranberry Walnut Relish I

I made this recipe last year around the holidays and just came across it this holiday season in my recipe album. It was definitely a keeper--very simple and better than another recipe I tried that wasn't cooked, just marinated in the frig. I did use a pricier brand of orange marmalade that wasn't bitter--not sure if that makes a difference, but since it turned out so well, I will do the same this year.

Feta Cheese Turkey Burgers

Wow--these were great. I was skeptical, at first, since there are not many ingredients. I did add 5 cloves of garlic crushed and used low fat feta cheese, and they came out like very tasty homemade gyro without the grease! We topped them with tzatziki sauce (1 cup sour cream, 1 grated cucumber--seeds removed first, 2 minced cloves of garlic, two dashes of dried dill, and juice from a half lemon), lettuce and tomato slices and everyone loved them! The kalamata olives do not overpower the other ingredients--everything works together perfectly. This recipe is a definite keeper...thank you!

Chocolate Cream Cheese Frosting

Excellent in both taste and consistency. I used only 3-1/2 cups of sugar which, to me, seemed to be perfect and didn't need to use the 2 tablespoons of milk. Very easy to spread--holds its shape.

Black Magic Cake

Very good cake. Coffee flavor is not apparent--tastes like a devil's food cake. I didn't have buttermilk on hand, so I used a cup of thick Greek yoghurt and 2 tablespoons of milk and it came out just fine.

Mocha-Cream Cheese Flan

This dessert is a definite keeper! It is very easy to make and is soooo delicious (without being too sweet)! I garnished it with whipped cream and fresh raspberries, and it looked so elegant.

Chocolate Cornstarch Pudding

Wow! I haven't made homemade chocolate pudding in a long time because the recipe I tried many years ago just didn't cut it. This one, however, was spectacular! I followed a couple of the hints from others--used rounded tablespoons of cocoa and used packed brown sugar in place of the white sugar. I also tasted it and found it needed 1/4 tsp. salt to a single batch perfectly balance the flavors instead of 1/8 tsp. Although I only had skim milk on hand, since it was the holidays I didn't want it to taste watered down, so I replaced 3/4 cup of skim milk with heavy cream. Although we are not really dessert eaters, the 6 of us who had it ate a double batch! Hmmmm...maybe this is not such a good recipe after all! : )

RamJam Chicken

By far the best chicken marinade I have ever tried! I doubled the listed quantity of wine so the soy sauce would be thinned out more, leaned heavier on the oregano in the Italian spices, then made a double batch for 8 boneless/skinless chicken breasts and 5 boneless/skinless thighs. Poked the meat deeply all over with a fork and placed in a large baggie in marinade for 2 FULL DAYS before grilling it! Chicken was full of flavor all the way through, tender and juicy! All family members loved it!!!!
