Corn Bread Casserole

I skipped the garlic and paprika, added two tablespoons of sour cream and 1 cup of cheese and some chopped jalepenos. Delish!

Coconut Rice

needs more curry. Add red pepper, garam masala and coriander for an added kick. Goes best with fish, in my opinion.

Pumpkin Soup

For vegetarians - substitue coconut milk for the cream. And if you don't want to puree the entire pot of soup - it helps to puree the onions after you sautee them. I didn't find in necessary to puree anything else. Serve with a rosemary baguette. Delish!

Malidzano Eggplant Spread

traditional melidzano does not use walnuts, it uses breadcrumbs. Also, you should add a tablespoon of lemon juice. Leave out one of the cloves of garlic. Otherwise, this is great.

African Chicken Stew

I think most of the people who didn't like this recipe probably don't enjoy African cuisine as a whole. My own observation are: too much peanut butter. My in-laws are from Liberia so I'm pretty well versed in west African cooking and they NEVER use this much peanut butter. The idea is for the peanut butter to ENHANCE the dish, not to be the main flavor. I used a heaping tablespoon myself. I rarely use pepper flakes, I just cut a ripe serrano pepper in half and toss it in. We're not big fans of garbanzo beans, so we used lima beans instead. Overall, great recipe. I wish more West African recipes were on this site!

Traditional Chicken Curry

Simply delicious - a great recipe for Indian food lovers that won't burn a hole in your mouth. My one "complaint" is that calling this a "curry" recipe without actually having curry in it is misleading. Cumin and turmeric are in the curry family, but they aren't curry. I shared this recipe with a friend of mine who doesn't care for curry and she wouldn't cook it because of the name - but I convinced her otherwise luckily. Otherwise, this is super yummy and will please your hubby too!
