If you are not a big eggplant person, cut it in half. If you want a stronger flavor, go with beef instead of chicken. The chicken has a very subtle flavor which I find is nice. Either is great though. Enjoy!

Easy Meatloaf

That was great! I really liked the brown sugar on it. Nice touch. I changed the bread crumbs to panko. You'll love the texture. It really changes it up some.

Using beef will add more flavor and for those who are not big eggplant fans...cut it in half. I also like big flavors, so if you are not one of those people, decrease the rosemary a bit. Glad so many like it. Thanks ;) ~M

All-Day Apple Butter

I found it a bit sweet so I added a bit of cognac to give it more depth. Loved it though. Excellent recipe!

Turkey Brine

Great brine... I used a "brine bag" which was just a huge ziplock. Made a wonderful turkey. It does make it cook about 30-45 min faster on a smoker. ~M

Turkey in a Smoker

Exceptional. I smoked a 21 pound turkey for 16.5 hours at 185 degrees. Used hickory chuncks. Soaked them for 48 hours before use. Brined the turkey as well. The taste was incredible. I will use this next year too. ~M
