Norwegian Sour Cream and Raisin Pie

My mother is from Norway and has NEVER heard of sour cream raisin pie, but maybe it's a regional thing (she's from the southeast coast). Regardless, it sounded intriguing and I had some raisins to use up. I made it exactly to recipe, using half golden and half dark raisins. Admittedly it wasn't the prettiest pie I've ever seen come out of the oven, and we were unsure how to tell if it was done. But we let it bake 50 minutes, cool on a rack for about 10 mins, then popped it in the fridge for about an hour. It was VERY good, and the perfect dessert to follow the really spicy dinner we had (Sausage & Chicken Etouffee) -- it cooled off our palates nicely. :) The pie was not nearly as sweet as I was worried it may be after reading a few reviews, and I have no idea how folks are getting a dry texture as mine was very moist (almost runny, but not in an unappetizing way). And I loved how flaky the crust came out, I had figured with such a wet filling, it may be soggy, but it wasn't at all! We'll definitely make this one again!

Chocolate Rum Balls I

These are really wonderful! I made them exactly according to the posted recipe and they're so easy and tasty! I should have read the tips about chilling the dough before rolling, but I just made do by washing/drying my hands after rolling out 5-6 balls and it was fine.

Slow Cooker Carolina BBQ

YUM!! I've never had "BBQ" in this style before. I grew up on Texas BBQ, so I was skeptical, but it was fantastic! We made the recipe exactly as written, but then dressed it with roasted jalapenos for the heck of it (YUM again!). It was a bit too spicy for our 10-yr-old, but perfect for us... and as I said, we even added jalapenos LOL. We served our son's open-faced on a piece of buttered bread, without any extra "sauce" and it cooled the heat just enough and he really enjoyed this way. So no, not what *I* grew up calling BBQ, but definitely a new addition to our rotation of favorite crock-pot dishes. :)

Slow Cooker Chicken Marrakesh

Fantastic! I made this dish just as written (only I used boneless chicken thighs instead of breasts) and it filled my crock-pot to the lid. I didn't touch it for 4 hours and it was perfect! Served over basmati rice, with a nice Black IPA to drink. YUM!

Sweet Potato Casserole I

This one has become a Thanksgiving tradition in our home (we've used this specific recipe for the past three years). Since the sweet potatoes are already tender coming out of the can, we skip the first step (no need to pre-cook them). I also cut back the sugar by about a third. Otherwise it is perfect and we'll be making it for years to come. Thanks for posting it to the site!

Zucchini Bread

FANTASTIC! Due to lack of groceries, I made a couple of changes - applesauce for oil, no choc chips. And instead of 9x5 pans, I used 8x4 pans. They only had to bake 45 mins, plus an extra 5 mins with the heat off & oven door cracked. The loaves turned out beautifully!! We used zucchini freshly picked from the garden, and this recipe will be used often I'm sure... we have LOTS of zucchini. LOL

Turtle Cake I

This cake was a HUGE hit for our Cub Scout cake auction. We made another for home. :) Didn't change a single thing in the original recipe, but added a carmel frosting on top. Perfect!

Hash Brown Casserole for the Slow Cooker

We made this for a Cub Scout pitch-in and it was a HUGE hit! I made the recipe *exactly* as instructed and it was perfect. Admittedly it didn't look done (not golden brown, like from the oven), but it was... and it was tasty!

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

We LOVED this recipe. I added a can of diced green chilis, but otherwise followed the directions exactly. It was super easy to throw together before heading to the office and ready when we got home. I can see us using this recipe often now that it's getting chili... oops, CHILLY out. LOL

Easy Chocolate Butterscotch Cookies

From start to nibblin' on cookies in 15 minutes. I love this recipe for yummy, quick cookies. I can't agree with others that have said the batter is oily though - mine was almost too dry to work with. I added an extra tablespoon of oil & a tiny splash of water to make it workable. I also used less than half of the chips called for - it was plenty and the cookies were totally delish!

Fruitcake Cookies

Wonderful!! Huge kudos from the staff at my office. This recipe made so many cookies, that not only did I feed the office, but I also gave away platters to several neighbors and still had plenty for us. The taste is just incredible (and I really don't care for fruitcake). I'll be making these year after year after year after..... (thanks!)

Azteca Soup

Extremely flavorful (I actually disgree with many other posters and loved all the cilantro in the recipe). Our only issue is that the soup was VERY spicy for some reason. We only used one chipotle, but it made the dish almost too spicy for one of our dinner guests. Fortunately the avocado (and a glass of milk!) kept the heat down a bit.

Chicken with Tomatillos and Poblanos

Very good. Made this one for a dinner party and it was very well received. Only changes I made were with tomatillos - couldn't find them fresh, so I used canned (worked perfectly) and I kept the chicken breasts whole. Gave the dish a quick lime squeeze before serving and served with black beans and white rice.
