Squash Stuffed with Ricotta Cheese

Good way to use up a bunch of extra summer squash that is so plentiful right now... but something was missing with this recipe, I just didn't find it satisfying. Maybe next time I'll try cooking some of the sauce over the stuffed squash, add some cubed cream cheese to the filling and possibly some ground meat or sausage; not sure.

Ratatouille Bake

Just made this for dinner tonight... had two large zucchini and eggplant from a friends garden, this worked well. My husband really liked it and he can be a picky eater. I did add half a can of tomato paste to the veggie mix when it was cooking on the stove (personal preference, really liked it). Also, the ravioli I had was cheese/spinach ravioli... it came with a packet of seasoning to mix with olive oil and toss the ravioli in, so I did that before I put them on the bottom of the dish. Very tasty... honestly though I wonder if it would have need more salt had I not added the seasoning packet that came with the ravioli. Give it a try! I think the veggie mixture would be good alone with a crusty bread or even over plain pasta. I'm thinking I might made the veggies and serve with chicken. Good stuff.

White Almond Wedding Cake

Urban Legend Chocolate Chip Cookies

These take a while to make but they are so moist and wonderful it is so worth it! I use pecans because I like them better than walnuts. Also, it is much easier on the kitchenaide and keeps it from mixing it over the edge if you half the recipe. They freeze great. For the ones I don't put nuts in I put M&Ms... that way people can easily tell which ones have nuts and which do not.

Chicken Chimichangas

Instead of rolling... I layered so I had a chimi lasagna. I omitted olives because my husband dislikes them and I added a can of green chilies. Also, use the recipe from the site for Refried Beans Without the Refry... excellent. Make them the day before for a meal, then use them again in this recipe!

Best Ever Brisket

Made this for a picnic type get together last summer and everyone loved it. I didn't want the chili powder to take over the flavor so I only used 1/2 tsp. Good stuff!

No-Noodle Zucchini Lasagna

I have made it following the recipe and it is a four star. However, when I tweaked it, it was much tastier! Great use for all that zucchini from the garden in the summer. After thinly slicing the zuc, i bread it in bread crumbs and lightly fry it, then make like you would any lasagna. Excellent.

Fruit Punch

I had this at a family function with my inlaws and you cannot believe how many times they request that I make this! I simply use equal parts of bottled fruit punch and ginger-ale, although I'll have to try the pineapple. I also make ice molds or cubs out of punch so it stays cold but doesn't get watered down. I usually use raspberry sherbet but any kind will work! Make sure the liquids are cold, cold, cold.

Tomato Pie I

We used garden fresh tomatoes but they were too juicy and sort of ruined the dish. I don't know if sauteing them first to get the extra juice out would help?

Lemon-Dilled Brussels Sprouts

I find brussels to be too bitter. I really liked them this way though. My husband, the brussel crazed said it covered up their taste though. I liked it... so I give it a 5!

Creamy Tomato Soup

This is a knock out tomato soup... we love it! Can make a meal just out of this. We like to crumble bagel crisps and cheddar on top. Also, we puree it all to make it smooth. Even used out own home grown tomatoes to make it this past summer... even better!

Classic Stuffed Turkey

I use this stuffing recipe all the time, usually make it in a casserole dish and back separately and boy is it good, just like my Mom used to make. I omit the mushrooms and I use stale bread because that's the way Mom did it!

Cheesy Ham and Hash Brown Casserole

Cheesy, hammy, potato goodness... what else can you say? Good stuff, everyone always likes these. When in a pinch I've used Real Bacon Bits when ham is not on hand, tasty. Also, I don't know why but it seems like the recipe is a bit tastier and creamier when using fresh peeled potatoes BUT much more work!

Sarah's Rice Pilaf

I needed a quick side... so I made plain rice in the rice cooker and then followed this recipe. Sauteed little star pasta (didn't have orzo) til brown and toasty. Separately (so pasta doesn't burn) saute onions, garlic and I added a can of drained mushrooms. Everyone loved it!

Balsamic Roasted Red Potatoes

I was really looking forward to these potatoes, used fingerlings that I had grown. I love balsamic vinegar but following the recipe added it toward the end and it made the potatoes soggy. Won't be using this again.

Moore's Cranberry Gelatin Salad

So tasty, I could and have eaten this for dessert! I use my little chopper from Tupperware to chop the cranberries. Also I use canned mandarin oranges in place of the orange it calls for. I add chopped pecans too. Very good!

Refried Beans Without the Refry

Took a couple times for me to get the amount of water you leave in the beans right so the consistency is right after you smash them... but once I did that they were excellent! I follow the recipe exactly (which is unusual), I have added a whole jalapeno which makes it a little spicier but still not crazy spicy. My suggestion for the amount of liquid you leave in the beans... push the cooked beans flat then ladle off excess liquid until the beans are just covered. Also, it makes quite a bit, so we make bean dip and a couple days later chimis or enchiladas etc. Excellent!
