Asian Orange Chicken

Excellent recipe. Three generations of family loved it! I halved the rice vinegar and used Orange Muscat Champagne Vinegar (from Trader Joes). I also just baked chicken thighs, sprinkled with salt & pepper and brushed with a light coat of sesame oil. When they were about 3/4 cooked, I brushed them with the orange sauce and broiled them until just crisp on each side. This was easier and healthier than breading and pan frying. Served with sticky rice and broccoli and doused in the orange sause...yummmm!!!

Broiled Tilapia Parmesan

Three generations of our family loved this recipe. I made some extra sauce and added brussel sprouts, onion, asparagus and squash to the pan and just cooked it all together. The whole thing came out great!

Shrimp Scampi Bake

This was an excellent recipe that my whole family (kids included) loved. I used all the butter, but then tossed the shrimp and sauce with 1lb. of angel hair pasta and some lightly steamed broccoli and cauliflower, for a whole meal in one dish. I also used fresh cilantro instead of the parsley - delish!

Pumpkin Bread IV

This recipe was wonderful!!! Here are the modifications I made: I added 1 small shredded zucchini (I couldn't decide if I wanted to make zucchini or pumpkin bread, so I made both), used fresh pumpkin, used whole wheat flour instead of white, used only 2 cups of white sugar and about 1 cup of pure maple syrup (it was still plenty sweet), and used only about 1/2 cup of oil and 1 cup of apple sauce. The bread came out super moist and everyone gobbled it up - even the picky kids. Enjoy!

Apple Crisp II

This was a huge hit at today's potluck! I may try it again tomorrow since there were NO leftovers from today's batch. I also want to try it with wheat germ in addition to the oats - a little more fiber and a little less guilt, right? Allrecipes.com comes through big for me once again!

This was very good, though a bit strong in flavor. Perhaps it was the bbq sauce I used. I also added diced potatoes which added a nice texture.
