This recipe was wonderful!!! Here are the modifications I made: I added 1 small shredded zucchini (I couldn't decide if I wanted to make zucchini or pumpkin bread, so I made both), used fresh pumpkin, used whole wheat flour instead of white, used only 2 cups of white sugar and about 1 cup of pure maple syrup (it was still plenty sweet), and used only about 1/2 cup of oil and 1 cup of apple sauce. The bread came out super moist and everyone gobbled it up - even the picky kids. Enjoy!
