Cream Cheese Pound Cake III

This is my go-to basic pound cake recipe. The exchange of cream cheese for some of the butter in other recipes gives it a nice, subtly differnt flavor.

Salisbury Steak Deluxe

This was a nice variation on my mom's Salisbury Steak. We skipped on the horseradish, but even without it, it was a nice, flavorful main dish, served with mashed potatoes and green beans.

Skillet Balsamic Chicken

Tried this with another reviewer's suggestion of using part red wine in place of the red wine vinegar. I can't say it lacked flavor... but in fact it was almost too potent. Might have been better over rice to give the dish more texture.

Apple Filled Chicken in Pecan Creme Sauce

I really liked this recipe. We didn't have white wine, so I subsituted apple juice, and my husband missed my note to reduce the sugar, so the sauce was definitely sweet, but still quite good. I think with the wine, and a little less sugar this would be great. Too much work to put it in my regular rotation, but a great every-now-and-then, special occasion recipe! Thanks!

Kickin' Collard Greens

These were great for my first time making greens, but I found they would have needed to simmer much longer than 45 mins. to become tender. They were still pretty chewy. Easily, fixed, though, so still 4 stars!

Fettuccine with Sweet Pepper-Cayenne Sauce

This has been added to the rotation at my house! The only changes I made were to chop the peppers into medium-size pieces rather than julienne. That way you get more bites with pepper in them. Also added a little more cayenne pepper, as we like it spicy, and I usually end up using a good bit more cheese than called for. I also took another user's advice last time and added the sour cream at the last minute and used a little less chicken broth. This did seem to give the sauce a creamier taste and texture, so I'll do that from now on. Thanks for a great recipe!

Bob's Stuffed Banana Peppers

This was a great recipe, tase-wise, but I agree with other reviewers that it makes entirely too much meat mixture for 8 peppers. Also, I think boiling the peppers for 5 minutes really cut down too much on their flavor. I'll skip that next time. Otherwise, excellent, yummy recipe. Thanks, Bob!

Bum's Lunch

I thought this would be a good, easy, and flavorful meal with extra seasonings as suggested by other reviewers. I was wrong. After cooking for closer to an hour, the onions were still quite crispy (Which I liked) but the potatoes were nowhere near tender. And the meat was extremely tough, even though I beat it thin. I think this might be a much better cook-over-the-campfire recipe than one to cook in an oven.

It could have been my really old oven, but although we followed the specified cooking time and temp. this was just way too dry. Might try again sometime on lower temperature.

Easy Taco Casserole

Made this for dinner last night. Used taco seasoning per package directions instead of chili powder and extra salsa instead of mayo. Topped with sour cream when serving. It was great! My husband went back for seconds, and he always teases that I can't cook! =)

Best Chicken Ever

I made this when my family came over to my new home for the first time, so I really wanted to make a good impression. No worries! They loved it! I took someone's suggestion and added ranch mix to the sour cream for a little extra flavor and it was awesome. To play devil's advocate, the meat was ever so slighty drier than I'd like, so next time I'll cook it at a slightly lower temp.
