About this Cook
Full time community service volunteer and mom to 2 kids, 12 and 16 boy and a girl.
My favorite things to cook
Healthy dishes, meals made from scratch with ingredients that are in the fridge or pantry. Side dishes to filet minon or meat dishes. Spinach, asparagus, rice, big variety salads.
My favorite family cooking traditions
baking pumpkin cake, pancakes, home made birthday cakes that fall apart and look awful but taste great. Homemade spaghetti, meatloaf, crock pot dishes and chicken.
My cooking triumphs
Feeding friends and neighbors at the last minute from my in-stock supply of fresh veggies, pantry pastas and sauces and frozen bags of taquitos!
My cooking tragedies
Did I mention my home made disaster cakes? Always a charm with layers, tons of blue or colored icing, M&M's or other candies or real flowers. At least the thought is there.

New Years Black-Eyed Peas
This recipe was a hit on New Year's Day since we have to serve Black-Eyed Peas for my Texas family. I did not have sausage or a "ham hock" but used thick sliced cooked bacon and that was awesome. I did not add rice or cheese since we have so much other food to serve that day (pork roast, mashed potatoes, green beans, etc.) I cooked it for a long time and the beans got very soft and tender. By the way I used a whole big bag of FROZEN Black-eyed Peas, easy!

Glazed Almonds
This was easy to make and when I was done the gang started eating them right away. I put them into the freezer and will pull them out for salads and to put into bowls for the holidays.
