Swiss Cheese 'n' Onion Quiche

Reviewed: Mar. 1, 2009
I had the best of intentions to make this recipe as written, but made a lucky error. I accidently forgot the pastry shell at the store and was too lazy to go back. I happened to have some frozen phyllo dough sheets on hand and made this like a breakfast lasagna, layering sheets of phyllo dough between layers of the egg mixture. To make it more dinner-appropriate I added some grilled shimp into the mix.

Onion Pasta

Excellent recipe. Be sure to caramelize the onions (takes about 30 minutes) for the best flavor.

Portobello Mushroom Ravioli with Prawns

Pretty good, but not quite good enough to justify how fattening it was.

Broccoli Crawfish Cheese Soup

Reviewed: Mar. 2, 2009
Excellent recipe and super-simple. I made a few changes according to my personal taste. 1. caramelized onions for 40 minutes, also used about 3 times as much onion and garlic as called for 2. mixed the shrimp into onion/garlic/butter/hot sauce before putting into the soup but did not cook them as I was worried the shrimp would become over-cooked 3. subbed creamed corn and chedder cheese soup for cream of chicken and celery 4. added about 3 tablespoons of lobster base to soup once it got hot 5. used old bay as well as increased amounts of hot sauce and cajun seasoning

Addictive Sweet Potato Burritos

Reviewed: Mar. 20, 2007
Very good, especially with some modifications. I sliced the sweet potatoes instead of mashing them so as to avoid the baby food feel. I cut down on both the beans and potatoes and instead added peppers, cilantro, green onions, olives, and tomatoes before placing it all in the oven for around 5 minutes.

Mexican Baked Fish

Reviewed: Mar. 18, 2007
Very good with cod. I think homemade salsa makes all the difference, as it is more flavorful and less watery. I made mine with peppers, grape tomatoes, jalapeño, cilantro, garlic, beans, and corn in about 10 minutes. I would also suggest waiting until the last few minutes to add the chips and cheese.

Broccoli Cheese Crepes

These were pretty good, but a tad bland unless extra worcestershire etc is added. Well worth eating again.

Adding 1/2 cup of either sour cream or yogurt to sauce adds to the flavor and texture

California Grilled Veggie Sandwich

Reviewed: Nov. 18, 2008
Excellent recipe! It was freezing cold when I made this, so I broiled the veggies in the oven instead of grilling outside. I also used fresh mozz cheese instead of feta since I had that on hand. Instead of the garlic mayo, I used a balsamic dressing on the veggies.

California Roll Salad

Reviewed: Mar. 18, 2007
This was so much better than expected. I'm not a huge imitation crab fan, so I was really hesitant, but this came out great. Definitely should substitute nori strips for lettuce as they really tie the dish together. I also doubled the rice to make it a main dish. Toasted white and black sesame seeds make a great garnish.

Stir-Fry Spinach Salad

Reviewed: Mar. 1, 2009
This has become a regular dinner with a few changes. I'm a vegetarian so I use the Morning Star "chicken strips" which work well with this recipe. Also, like others I use a bed of rice instead of spinach.

Portobello Mushroom Stroganoff

Not bad, but even with extra seasoning it was rather bland.

Baked Dijon Salmon

Reviewed: Mar. 1, 2009
Amazing. I had wanted to make the macademia encrusted salmon (also excellent and on this site), but my fiance couldn't find the right nuts. This was the back-up and even better than the other recipe.

Coconut Curry Tofu

Reviewed: Nov. 18, 2008
Excellent base recipe, but made a few changes... 1. I drained the water from the tofu by squeezing it, broiled it in the oven for 20 minutes, and fried it in oil for 7 minutes. 2. I thought that there was not enough liquid for all the veggies so I added about a cup of light cream 3. I also added avacado, zucchini, and subbed bamboo for the bok choy

Deep Dish Alfredo Pizza

Excellent base recipe. We like spicy food so I added buffalo hot sauce to the alfredo sauce and covered shrimp in a cajun spice.
