So easy the way it is AND so easy to modify! Instead of cubing the chicken, once I cooked it, I just threw it in the food processor. Had to substitute what I had in the house, so peas and corn instead of mixed veggies and cream of mushroom instead of cream of chicken. A little extra milk since everyone was saying it needed two cans of soup but I only had one. No bacon and I made homemade biscuits but I actually had some french-fried onions left over from Thanksgiving! Only used half the can and that tasted perfect. I think if I’d used the whole thing, it would have been too onion-y. Just finished dinner and already looking forward to leftovers for lunch tomorrow!

Awesome! How many ways have I altered it? Probably different each time! The roasted red peppers MAKE the dish though, so don't skimp on them. I usually add kidney beans and use frozen instead of canned veggies.

good recipe! Be sure to use enough green beans, though... my turned out a little soupier than I'd like, but I didn't quite have enough for the huge batch I was making.

I've NEVER made hash browns before and really don't eat them, so I had no idea if they were going to be good, but my family LOVED them! And since they know hash browns much better than me, I'm taking their word for it, and I loved them too!

The only addition I made was the spinach. Warning: it goes fast!!! Of course with a husband and two teenage boys, all the food goes fast, but this is now one of their favorites!

Finally, a pie crust recipe that's as easy as it says! I do roll mine out, though, and I've found that this recipe can make four crusts. I like to use whole wheat pastry flour and organic ingredients. Also, I sprinkle in some flaxseed, which gives it a nutty flavor that people seem to love!

The whole family loves this! I don't peel the potatoes and I use a lot more than 2, but then again, I never measure anything. I thought I'd have leftovers the first time I made it, but they finished it all! Now I at least double the recipe.
