Easy Quiche

DISASTER - I used a loose bottomed quiche pan. Major leakage. A complete mess. I guess it's the pastry that holds the filling in a regular quiche. Luckily, I had put the pan on a cookie sheet. Sheet is ruined. House stinks. Where's that take-out menu?

Glendora's Chocolate Fudge Pudding (Cake)

This is a classic British dessert that I have been making for 20 yrs. I think this one adds a little too much salt. A pinch will do. The walnuts are optional. You would never, ever turn this cake out to serve. Big mess. Don't try. A really easy cake to make though and always popular.

Red Beans and Rice

This is my 8 yr-old son's favorite dish. I use a 'healthy' turkey sausage and sometimes add spices and garlic. It's always a winner. We top with sour cream and cheese. It's more like a sausage chili and he always asks for more.

Creamy Potato and Leek Soup

I did not like the texture of this soup. I had to add an extra can of broth to make it work. It tasted OK when topped with crispy onions. I used the cream and it was a bit cloying. I will try with milk next time. Also added a lot of seasoning and an onion.

Chocolate Zucchini Bread II

Made 20 cupcakes with this recipe. Omitted the cinnamon, used 1/2 applesauce, 1/2 oil. Cooking time was 15 mins. Absolutely awesome result. Thanks!

Maple Salmon

I added a little fresh ginger into the mix and some lemon juice. Also basted fish during cooking and again when it was done.
