Spinach and Orzo Salad
This salad was oh so yummy! I toasted the pine nuts because, as with all nuts, it brings out the essential oils and gives the dish a better flavor.
My only complaint with this salad was that the ratio of orzo to spinach is not what I thought it would be. In the picture it looks like more spinach, however, my final dish was predominately a pasta dish with spinach in it. Also, the size of the dish was huge. I had a party with 10 people and half of the salad was still left. I used it as a side dish though; if it was served as an entrée the number of servings would be more accurate.
I will definitely make this dish again. I will make it smaller though and adjust the pasta ratio though to make it more of a salad. I might try to add olives and possibly sundried tomatoes, as others had suggested, to give it a little boost.
Overall: You don't want to pass this easy yet delicious dish up!
