Broccoli Noodle Side Dish

Reviewed: Apr. 12, 2008
My family loved this dish! I followed other suggestions and added crushed red peppers and topped with parmesan cheese. It took longer to cook than I expected (I'll chop the broccoli smaller next time), but it was worth the wait!

I usually don't get excited over pork chops, but this recipe was delicious!

Slow Cooker Mashed Potatoes

Reviewed: Jun. 22, 2008
Pretty good, but mine turned out really dry - which surprised me because so many other reviews said their's got soggy. The flavor was really good, though, so I will definitely try it again.

Excellent! I fixed this for my husband and really "wowed" him - he said it tasted like something from a fancy restaurant!

Tortilla Rollups II

Reviewed: Nov. 25, 2008
I made this for a birthday carry-in at work, and they were all eaten within a couple of hours. Two people even came and asked me for the recipe at the end of the day! I did double the salsa as some other reviews suggested, and added a dash of taco seasoning. I only ended up with enough for 6 and a half tortilla shells even though I spread it really thin. If you are having a larger group you should double it. I will definately make this again!

Ham with Honey and Brown Sugar Glaze

Reviewed: Dec. 27, 2008
I made this for Christmas Eve dinner. It was okay, but not "great". Like a lot of other reviewers, my glaze did not thicken up, but that turned out to be for the best. I think I could have used a lot less juice and it would have been better. If I make this again, I'll leave out the orange juice - it made the ham taste too "fruity" for my liking.

Lower Fat Banana Bread I

Reviewed: Jan. 3, 2009
This is the best banana bread I've ever tasted! I did make some changes: I used brown sugar instead of white, fat-free milk instead of water, and used real butter instead of margarine. I added about 3/8 tsp of cinnamon. After reading other reviews, I checked it after 45 minutes - I ended up baking it for 52 minutes, and it was perfect! I will definitely be using this recipe for my home-baked Christmas gifts next year!

Buttercream Icing

Reviewed: Feb. 21, 2009
I love this recipe!!! I refuse to use shortening, so I used all butter, but I followed everything else exactly according to the recipe. I'm not a big icing person, but I couldn't stop sampling this one! I used a large star tip & piped onto french vanilla cupcakes for a family birthday party. My mom & stepdad said they would split one. By the time my mom looked over, my stepdad had eaten the whole thing. This recipe is a success!! Thank you!!

Tomato Cucumber Salad

Reviewed: May 3, 2009
This was very simple, healthy, and tasty. I will make it again, but will probably add some seasonings or vinegar. I gave it 4 stars instead of 5 because it was a little bland, but still good.

These are awesome! I made them for an early Mother's Day dinner last night, and everyone liked them. So simple to make, and I always have all the ingredients on hand. My husband already asked if I was making another batch today! Thanks for a delicious recipe!

The Best Rolled Sugar Cookies

Reviewed: Sep. 13, 2009
I followed the advice of some other reviews and added extra sugar and vanilla. They taste fantastic! However, if I was going to put any sort of icing on them, I'd stick to the original recipe because otherwise I think they'd be too sweet. I did have some trouble with the dough being too sticky, but I think that's because I used extra sugar. Next time I'll stick to the original recipe and ice them and see how that goes. Thanks!

Sugar Cookie Icing

Reviewed: Oct. 30, 2009
This is EXACTLY the kind of icing I've been looking for! I used vanilla extract instead of almond because that's what I had on hand. I did have to use more milk & corn syrup - with the amounts in the original recipe, it was a lump of dough. With the extra liquids, this covers great, dries shiney and hard, but not crunchy. Looks impressive and tastes great. Thank you!

No Bake Cookies III

Reviewed: Nov. 22, 2009
Absolutely perfect!!! I followed the recipe exactly, and it turned out perfect. Took the advice from another review and waited until it reached a full rolling boil before starting the 1 minute timer. Also, before boiling the other ingredients, I measured out the oats, then plopped the peanut butter on top of them, made a dent in the middle of the peanut butter & poured the vanilla in it. This way it was easy to add all 3 of these ingredients immediately after removing the pan from the heat. They turned out perfect - set up nicely, and were not too dry nor too gooey. My husband wants me to make these every week now!

Chocolate Fudge Cookies

Reviewed: Dec. 10, 2009
I first made this according to the ingredients listed, using just a little less than 1/2 cup oil. They were just okay - I didn't care for the devils food taste. I made them again a week later, same way, but used dark chocolate cake mix instead of devils food....WOW!! They are awesome!!!! Definitely going to make these a lot!

Oven-Crisped Potatoes

Reviewed: Jan. 31, 2010
Awesome!!!!!! I sprayed the dish with canola oil first so it would be easier to clean. I used 4 red potatoes, and I think a bit more onion than called for - I just cut a slice off an onion I had already used a few days ago, and chopped up that one slice and did not measure. I was a bit short on time, so I put the sliced potatoes in the microwave on high for 2 minutes, then added the butter/onion/pepper mixture and baked for 45 minutes - Perfect!! My husband loved these and wants them again later this week!

Jay's Signature Pizza Crust

Reviewed: Feb. 7, 2010
Excellent! I added some Italian seasoning and onion powder, but that was the only change I made. This makes a LOT of dough. I used a large rectangle pan and it baked up THICK like a pan pizza, which I really like. If you prefer thinner crust or "hand-tossed" style, you could use a little over half the dough for the pizza, and make breadsticks with the rest. Thanks for an awesome recipe!!!

Salsa Chicken Burrito Filling

Reviewed: Mar. 2, 2010
This was FANTASTIC!!!! The two chicken breasts I had were huge, so I nearly doubled the other ingredients except for the taco seasoning. It cooked in exactly the amount of time called for. I put the chicken in flour tortillas along with black beans, brown rice mixed with a little salsa, mexican cheese blend, and a heaping spoon full of hot salsa. My husband and I LOVED it!!! A restaurant in town has something very similar, but this is even better. Will be making this again and again!
