Chewy Cocoa Brownies

I left out the nuts and powdered sugar. Baked in a glass pan at 340 degrees for about 22-23 minutes. DELICIOUS!!!!! My favorite brownie yet. They cut clean and came easily out of the pan without crumbling apart at all. I didn't use parchment paper, just buttered the pan. They lasted less than 24 hours in my house, and there are only two of us :-). YUM!!!

Kentucky Biscuits

These were decent, but just didn't turn out quite like I thought they would. I might try making them again with a little less butter. This was my first attempt at homemade biscuits, so considering that, they were pretty good :-)

Black Bean and Corn Quesadillas

My husband and I loved these! I left out the brown sugar, and used a little more salsa...not sure how much, just a couple extra spoonfulls because we love salsa. I heated them in the oven instead of a skillet so they'd be done at the same time. Buttered two cookie sheets, laid down 4 of the tortillas, layered cheese, filling, more cheese, top tortillas. I brushed the top tortillas with a little melted butter, baked at 350 for 9 minutes and then broiled on low for about 2 minutes. Delicious!!!

Valentino's Pizza Crust

I followed the recipe ingredients exactly, but let it rest for closer to 20-25 minutes. I spread the dough out onto a lightly oiled pan sprinkled with corn meal. Then I sprinkled the top of the dough with oregano, basil, and a little garlic powder. Baked on the lower rack of the oven for 5 minutes, then took out and added sauce, minced garlic, and mozzarella & provolone cheeses, and brushed the crust edges with a little olive oil. Baked for approx 14 more minutes on the middle rack. Pizza was very good, and the crust was very thick, which I like. So if you like thin crusts, you'll want to use a very large pan or make two pizzas with this recipe. I will definitely make this again!

Colene's Easy Tomato Vegetable Soup

Great base recipe. Usually I don't write a review if I change a recipe, but I loved the starting point this recipe gives and I did not eliminate any of the ingredients - simply added to it, so I wanted to give it a good review. I added some chopped onion, minced clove of garlic, diced red potatoes, and a can of diced tomatoes with no salt added. Also increased oregano & added basil. Lots of fresh ground black pepper, and only a dash of sea salt near the very end. DELICIOUS! Thank you for this recipe. I had never made vegetable soup before and this recipe took the fear out of it for me :-)

Fried Broccoli

I made this using fresh broccoli and did not add the salt. My husband LOVED it and wants this recipe cooked at least once a week. Delicious, easy, and only a few ingredients. Perfect!

Amish White Bread

5 stars is not enough! This bread is delicious and easy to make. My husband and I ate almost an entire loaf with our "breakfast dinner" last night. I considered halving the recipe to make only 1 loaf, but I'm glad I didn't. I used the exact measurements called for in the recipe and used my KitchenAid mixer with dough hook to do the kneading. This recipe is a keeper for sure. I plan on making this bread every week! ***edit: I've now made this bread 3 times and every time it turns out delicious!!! I'm addicted :-)

Pumpkin Chip Cookies

This is now my absolute favorite cookie! Made these for Thanksgiving. I added 1 tsp pumpkin pie spice, but other than that followed recipe exactly. This makes a LOT of cookies. As I was adding the flour mixture, the dough became too much for my mixer (not enough room in the bowl so the dough was coming up over the top of the beater), so I took the bowl off the mixer and stirred in the remaining flour mixture and chocolate chips with a wooden spoon. Used a tablespoon measure and dropped onto cookie sheets. As another reviewer commented, these do not spread out much, if at all, so I did press down on the dough balls lightly with the back of a spoon to flatten them just a little bit for more even cooking. I found 11 minutes to be the perfect length of time in the oven. Texture is somewhere between a cookie and pumpkin bread or cake, which I really liked. The taste is delicious, and they stay nice and moist for days!! I will DEFINITELY be making these again!!!

Delicious Ham and Potato Soup

Delicious indeed!!! This was my first attempt ever at making potato soup, and it turned out perfect. I think I used 4 cups of potatoes instead of 3 and a half, but other than that I followed the recipe exactly. My husband said this is the best potato soup he's ever had! This will become a regular meal at our house. If your thinking of trying this recipe - definitely do. You won't regret it!!!

Salmon with Brown Sugar and Bourbon Glaze

This was good, but next time I will not spoon the sauce over the salmon....it was very thick and caramel-like and stuck to our forks drawing long strings of the sugary substance from the plate to our mouths....not an easy eating experience. Once we scraped the sauce off the remaining salmon, we really enjoyed it. To sum it up, we really liked the flavoring the sauce gave to the salmon, but didn't enjoy the sauce itself.

Corny Chicken Wraps

Simple, healthy and delicious. It took me a lot longer to clean up than it did to cook! I omitted the black olives (because I don't like them), but other than that I followed the recipe exactly. My husband and I both really liked these, and you don't feel guilty after eating them because they are quite healthy. The recipe does yield 6 wraps, but you should plan on two wraps per person unless you are serving something else with it. We will definitely be fixing these again!

Salsa Chicken Burrito Filling

This was FANTASTIC!!!! The two chicken breasts I had were huge, so I nearly doubled the other ingredients except for the taco seasoning. It cooked in exactly the amount of time called for. I put the chicken in flour tortillas along with black beans, brown rice mixed with a little salsa, mexican cheese blend, and a heaping spoon full of hot salsa. My husband and I LOVED it!!! A restaurant in town has something very similar, but this is even better. Will be making this again and again!

Jay's Signature Pizza Crust

Excellent! I added some Italian seasoning and onion powder, but that was the only change I made. This makes a LOT of dough. I used a large rectangle pan and it baked up THICK like a pan pizza, which I really like. If you prefer thinner crust or "hand-tossed" style, you could use a little over half the dough for the pizza, and make breadsticks with the rest. Thanks for an awesome recipe!!!

Oven-Crisped Potatoes

Awesome!!!!!! I sprayed the dish with canola oil first so it would be easier to clean. I used 4 red potatoes, and I think a bit more onion than called for - I just cut a slice off an onion I had already used a few days ago, and chopped up that one slice and did not measure. I was a bit short on time, so I put the sliced potatoes in the microwave on high for 2 minutes, then added the butter/onion/pepper mixture and baked for 45 minutes - Perfect!! My husband loved these and wants them again later this week!
