Honey-Garlic Glazed Meatballs

These were really good. I had to make a few changes because of what I had in my pantry, but I can't imagine that the end result was too far off from the original. Instead of bread crumbs, I used crumbled vegetable flavored Ritz crackers (gave the meatballs a really good flavor, I think). I didn't have enough honey so I added brown sugar, and I used Worcestershire sauce instead of soy. The sauce was awesome. Served over brown rice and it was a great, easy dinner. My bf even said he was planning on cutting up the leftovers and making a meatball sandwich for lunch.

Roasted Garlic Potato Soup

This is a really good base for a soup, and I was surprised that with so few ingredients it had such a good flavor. I used red potatoes (leaving the skins on for a nice color), roasted the garlic with them, and sprinkled some oregano and salt in with the pepper and olive oil. I used red onions also. At first, the soup was quite a bit thinner than I normally like my cream soups, but I was able to solve this by simply adding in the potatoes I had reserved. For this I just used a hand mixer (not a blender) to keep some of the chunks in tact, and garnished with shredded parmesan and crumbled bacon. Overall, I was pleased. I'm even looking forward to leftovers for lunch.

Jamie's Cranberry Spinach Salad

I got this recipe about a week ago, and I think I've eaten this salad every single day since. It's really easy to throw together, and it's a taste that you'll keep craving. I wish I would have brought some with me for lunch today, but I guess I'll have to wait 'til supper.

Sesame Seared Tuna

Yum! My boyfriend hates seared tuna, so I made this for myself one night while he was out of town. It's an easy recipe to scale down, and I'm so glad I made this! For a side, I made Jamie's Cranberry Spinach Salad from this site (which I HIGHLY recommend). Dinner took about 10 minutes in all, and it was one of the best meals I've had in a while. The only thing is, I felt guilty about wolfing down a $15 tuna steak in so little time. What can I say? I couldn't help it; it was too good.

Pasta Salad II

This is a really good pasta salad, and it's a really simple recipe. I made it on the morning of the 4th of July, and the flavor was great by the late afternoon when we ate. We had plenty left over (it makes a lot) that kept suprisingly well, too.

Bronco Burger

I got to play hostess for 4th of July, and I remember getting confused looks when I replied to people's questions of what I was making. Everybody kept saying it seemed like a lot of trouble to go into burgers. That is, until they tried them. One of our friends even ate one that had fallen on the ground. Guess that means people liked them. I know I did.

Chicken Piccata II

If given the option, I would maybe say 3 1/2 stars, but it wouldn't have felt right rounding up to 4. It was good, but a little bland. The lemon was pretty much the only flavor to the chicken. It might be worth it to tinker with the recipe a bit; I especially liked the suggestion of another reviewer of using white wine and chicken stock. I think I'll try that next time.

Sesame Green Beans

Yum. I've made these a few times now. They're just so easy to make, and I love how I don't have to use any butter. I use EVOO for browning the sesame seeds, and I also throw in a little bit of garlic before I add the green beans (I use frozen, btw.. it's so much easier!). And something to try if popping sesame seeds is too much of a hassle: toast them in a 350 deg oven for about 10-15 minutes instead of frying them. Less mess, problem solved.

Salmon with Lemon and Dill

I love how these took no time at all. It's an easy, flavorful dish. I'm also happy with the fact that thanks to this recipe, I'm now able to get my boyfriend to eat fish.

Cheddar Beef Enchiladas

Maybe I'm spoiled by living in Houston and having access to some of the best Tex-Mex in the world, but for me, these were just "OK". I must say, though, it was nice to have extras frozen, so dinner was a snap the next week.

Shrimp and Pasta Supper

You know, I wasn't too impressed with this recipe as listed. I liked all the ingredients, but something just wasn't too special about how they were put together. I think it had something to do with the kind of pasta used; the linguine just didn't seem to work for me. I think next time I'll try angel hair.

Cream Cheese Frosting II

The flavor was good, but the consistency was a problem for me. In my case, it turned out way too runny for cupcakes, even after I added an extra cup of confectioner's sugar and tried chilling it in the fridge for over an hour.

Maple Dill Carrots

I have to say, I remember growing up and hating carrots that were cooked. But I made pork chops the other night, and decided to try these as a side. Wow. That's all I can say. These carrots are awesome. And they're so easy to make (I just added all the ingredients to taste); I have a feeling this will soon become a staple side dish in our home.

Ten Minute Szechuan Chicken

This was definitely a tasty basic recipe. My favorite thing about it, though, is it's versatility. You could tweek this in so many different ways, and I'm sure they'd all be good.
