Ruth's Grandma's Pie Crust

Delicious and flakey. You can NOT prebake the crust with this recipe with the high shortening content it will melt in your pan. Keep it cold.

Chicken Enchilada Soup III

I love this soup! It tastes just like the one from Chili's. I used leftover rotisserie for my broth (cover the whole thing with water and boil) and for my shredded chicken. I used the masa harina, I had it from another recipe, but using the corn tortillas sounds like a great idea too. I will definitely be making this again!

Baked Ziti II

This was delicious! I used rotini because that's what I had on hand. I added some garlic and fresh basil to the mixture too, just because I do that with all my pasta. I also used up about a half pound of cooked and crumbled Italian sausage. This was a recipe for me to use up some foods. I read reviews about it being too dry so I baked mine with foil and than 15 min at the end without foil. It was not dry, very moist, cheesy and flavorful! I am definitely making this again.

Parsnip Pancakes

Yum! Love it with a dollop of sour cream and a sprinkle of Tony's (Chachere's), but I love that on almost everything. I also tried it with mashed or shredded potato in the mix when I don't have enough parsnips. I also shred the onion.

Easy Pizza Sauce III

Oh my so good!!! I did add a pinch of sugar as some others did. My picky daughter wanted to lick the mixing bowl clean! The greatest sauce ever. Generously sauced one large pizza (Jay's signature crust) with a couple cups left over to freeze.

Grandma's Butter Noodles

Easy and delicious, used in chicken noodle soup made with leftover rotisserie chicken. I didn't allow drying time and I think they turned out just fine. I used lots of flour when rolling and cutting.

Baked French Toast

OMG! There is not a word good enough to describe this! I had a whole loaf of my homemade braided bread sliced. I only used 6 eggs with some vanilla soy. (We don't do regular milk). It was plenty egg mixture. I added a dash of nutmeg, just b/c I love nutmeg in my french toast. it sat in my fridge overnight and the next day until I baked it for dinner, still turned out delish. I halved the brown sugar mixture just b/c I didn't want to pour that much sugar butter over my french toast! But it was still plenty! I baked covered for 20 min than added the sugar mixture and than continued baking uncovered for 20 min. I love this recipe! I even bumped up the temp to 400 for the last half to oven bake some bacon. Perfect!

French Bread

Perfect. I do proof my yeast beforehand (warm water, dissolved yeast, and a couple spoons of sugar, let set, if it foams the yeast is good). I learned my lesson the hard way to always check the yeast. Also don't let it over rise, it will fall and get flat and dense. This turns out great even though it uses all purpose flour. I make my three slashes before the second rise.

Maple Leaf Biscuits

I can't stress enough, don't over mix your biscuits! No kneading required. Mix until ingredients come together in a ball. Use really cold butter or shortening and leave it a course meal (chunky).

Zesty Porcupine Meatballs

Yum. I use ground turkey, about a half pound, and double the rice to make them more porcupiney. I use regular short grain rice cooked less time with less water (about 1 part to 1 part). I bake in a glass 9x13 pan at 400 for 20-25 min than add the sauce mixture and cook another 10-15 min. Delish. Sometimes I sneak finely grated carrot into the meatball mixture or some v8 instead of soup.

Sweet Corn Cake

Very yummy, made just as it said. Delish! Don't confuse masa harina (which is a corn flour) with harina de maise ( a course cornmeal.) masa harina is sold in the paper bags just like all purpose flour. It is corn flour specially prepared with lime. Also called instant masa mix.

So easy. My pickey husband loved them!!! I used our deli's cajun roast beef. yum! I will definately make agian and agian. It took only a couple minutes! Great for busy working moms!

It was okay, good simple comfort type food. I would make this again one day probably, just b/c it was so easy. My daughter did not care for it though, I think it might have been the rotel.
